Start by separating the egg whites from the yolks. Beat the egg whites with a pinch of salt until you get a firm foam, gradually adding the sugar until a glossy meringue forms. In another bowl, mix the yolks with the ground walnuts and flour until homogeneous. Then, carefully fold the meringue into the yolk mixture, being careful to keep the air in the meringue.
Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper. Pour the mixture evenly into the tray and level it with a spatula. Bake for about 15-20 minutes or until the edges are slightly golden. When ready, remove the roll from the oven and turn it onto a damp towel, carefully removing the parchment paper. Roll the top with the help of the towel and let it cool completely.
Meanwhile, prepare the filling from white chocolate. Heat the whipping cream and, as soon as it starts to boil, pour it over the broken white chocolate pieces. Mix well until the chocolate completely melts, obtaining a smooth cream. Let the mixture cool slightly, then beat it with a mixer until fluffy.
Unroll the cooled roll and spread the white chocolate cream evenly over the surface, leaving a margin of a few centimeters. Roll the roll again, being careful to tighten it slightly to maintain its shape. Wrap the roll in plastic wrap and leave it in the fridge for a few hours, preferably overnight, to set.
When you are ready to serve, take the roll out of the fridge, slice it, and decorate with roasted walnuts or grated chocolate if desired. The composition is spread on baking paper (I used the standard oven tray) and baked for 10-15 minutes in a preheated oven at 175 degrees. 6. A toothpick test is done to see if it is ready. 7. The hot base is turned face down onto another piece of baking paper. A little water is sprinkled on the paper where the base was baked, and it will come off easily. 8. The warm base is rolled up without filling in the new paper and left to cool. When cool, the cream is spread and rolled tightly, then it is placed in the refrigerator for about 30 minutes, after which the roll can be decorated. Preparation of the cream: 1. All ingredients are mixed and the cold base is filled, rolling it tightly. 2. For decoration, I kept a little ground walnut and whipped 150g of cream. Tip: If the roll base is a little sticky, try adding an extra tablespoon of starch and reducing a tablespoon of sugar. This can happen due to the humidity level of the type of flour used.
