Pig Soup - A comforting and flavorful recipe for chilly evenings

When you feel the need for a warm and nourishing dish, nothing compares to a fragrant pig soup. This simple and quick recipe transforms basic ingredients into a culinary delight, perfect for warming your soul.

Ingredients:
- 500 g pork (ideally from the neck or shoulder for a tender texture)
- 1 carrot
- 1 parsnip
- 1 onion
- 1 celery stalk
- 1 handful of peas (you can use fresh or frozen peas)
- 1 bell pepper (red or green, according to preference)
- 1 large potato
- 2 cloves of garlic
- 1 can of chopped tomatoes (400 g)
- 1 teaspoon of pepper paste (Harissa for an extra flavor)
- 1 handful of rice (you can substitute with quinoa or buckwheat for a gluten-free option)
- 2 bay leaves
- 2 allspice berries
- 1 tablespoon of dried parsley
- Celery leaves for garnish
- 3 tablespoons of borscht (or 3 tablespoons of Magic Borscht)
- 4 tablespoons of sweet cream
- Salt and pepper to taste

Preparation method:
1. Start by cutting the pork into medium-sized cubes. Place it in a large pot and add enough water to cover it. Bring to a boil along with the bay leaves and allspice berries.
2. Once the water starts boiling, skim the soup to remove impurities. This step is essential for getting a clear and tasty soup. After finishing, remove the bay leaves and allspice berries.
3. While the meat is boiling, prepare the vegetables. Chop the carrot, parsnip, onion, celery, bell pepper, and potato into small pieces. Garlic can be minced or crushed, depending on preference.
4. Add the chopped vegetables to the pot with meat and let them boil for 20 minutes until they become soft. Meanwhile, the rice can be rinsed under cold water.
5. After 20 minutes, add the canned tomatoes, pepper paste, rice, dried parsley, and borscht. Lower the heat and let it simmer for another 10 minutes. This step will intensify the flavors and enrich the soup.
6. Finally, remove the pot from the heat and enrich the soup with cream. Mix well and adjust with salt and pepper to taste.
7. Serve the soup hot, sprinkled with finely chopped fresh celery leaves and, if you like, with pickled hot peppers on the side - a delicious combo that will delight those who love spicy dishes.

Practical tips:
- For a more intense flavor, you can also add a teaspoon of smoked paprika.
- If you want a heartier soup, you can also use other vegetables like zucchini or green beans.
