Banana and Nut Cake
We start by preparing the oven, setting it to 180 degrees Celsius, so it is well heated when we handle the dough. In a large bowl, we combine the dry ingredients, namely flour, baking soda, salt, baking powder, cocoa powder, and sugar. The mixture should be homogeneous, so it is good to use a whisk or a spatula to ensure all the ingredients are perfectly integrated.
In another bowl, we prepare the wet ingredients. Here we will mash the bananas well using a fork or a blender, so that we obtain a smooth paste. Over the bananas, we add buttermilk, oil, vanilla extract, and eggs. If we wish, we can also add a little grated lemon zest, which will provide a fresh and aromatic taste. We mix everything well until the wet ingredients combine into a uniform mass.
If we want to add extra texture and flavor to our cake, we can divide the mixture into two portions. In one half, we add chopped and ground nuts, which will add a pleasant crunch and a rich flavor. It is important not to mix the composition too much, as this may affect the rise of the cake. So, we gently pour the wet mixture over the dry one and mix with delicate movements until the ingredients come together.
After obtaining a homogeneous dough, we divide it into trays. Make sure the molds are well greased or lined with parchment paper to avoid sticking. We place the trays in the preheated oven and let them bake for about 40 minutes. It is essential to check if the cake is done by inserting a stick in the middle; it should come out clean, without traces of dough.
After the cake is baked, we take it out of the oven and let it cool on a rack for 15 minutes. This stage is important as it allows the moisture to evaporate, and the cake will have a perfect texture. Once it has cooled, we can slice it and enjoy its delicious aroma. It is a perfect dessert for any occasion, and the combination of bananas and nuts is simply irresistible. Enjoy your meal!
Ingredients: 170 g flour, 150 g sugar, one and a half teaspoons of baking powder, half a teaspoon of baking soda, a quarter teaspoon of salt, 100 g barley, oats, wheat (if you can't find it, substitute with flour), I used a mixture of all three, but you can use any of them or a combination, depending on what you have at home. 3 very ripe bananas (the peel should have brown spots) well mashed with a fork, 50 ml buttermilk or kefir, or yogurt (all fat-free or with as little fat as possible), add a little more as needed if the mixture is too thick. If you don't have it, you can substitute with milk, soy milk, also skimmed. 2 tablespoons of vegetable oil, I used walnut oil, one teaspoon of vanilla extract, or if you don't have it, a packet of vanilla sugar. 2 large eggs, beaten, a little oil for greasing the pans. If you want, add nuts, two handfuls, one ground, the other chopped into small pieces with a knife. If the mixture is too thick, add a little buttermilk or kefir, or yogurt, or milk, or soy milk.
