We prepare the wafer sheet in the following way, especially if we do not have a tray exactly the size of the sheets. We start by arranging the wafer sheet on a piece of aluminum foil, making sure to lift its edges to form a higher border around the wafer sheet, which will help us retain the delicious filling. It is important to ensure that the foil is well stretched to avoid any leakage of filling.

Then, we take care of the nuts. We cut them lengthwise, making sure each piece is uniform to add a pleasant texture to the dish. In a saucepan, we put 140 grams of sugar and the two eggs. We mix the ingredients well, then add the soft butter, trying to homogenize the mixture as much as possible. It is essential to stir constantly, as the mixture can quickly stick to the bottom of the saucepan and burn, thus destroying the flavors. We continue stirring until the cream thickens, a process that takes a few minutes.

Once the cream is ready, we add the chopped nuts, gently mixing to incorporate them evenly. Meanwhile, in another saucepan, we prepare the second portion of sugar, adding a tablespoon of water. We caramelize this mixture, being careful not to let it burn. The desired color is a light brown, indicating that the sugar is perfectly caramelized. Once we have obtained the caramel, we quickly pour it over the egg and nut mixture, stirring quickly so that it does not harden.

Once the mixture is homogeneous, we pour it over the wafer sheet, making sure to distribute it evenly. It is important to work quickly, as the caramelized sugar will harden very fast. We cover with a second wafer sheet, then cover the dish with aluminum foil and place a weight on top to press it down. We leave everything to cool, either for a few hours or preferably overnight, to allow the flavors to combine.

When we are ready to serve, we can decorate our delight with caramel sugar mixed with ground nuts or we can choose to leave the wafer sheet plain, considering that its rustic appearance has its own charm.
