Ingredients:
- 500 g pork bones with meat
- 2 green onions
- 2 bell peppers
- 1 large carrot
- 2 medium tomatoes
- 4 medium potatoes
- 1 handful of green beans
- 1 handful of peas
- 2 slices of kohlrabi
- a few broccoli florets
- a few cauliflower florets
- 1 small celery
- 1/2 leek
- 1 tablespoon of rice
- 2 tablespoons of couscous
- salt and pepper to taste
- fresh lovage
- fresh parsley
- 1/2 l borscht
- 200 g tomato juice
Preparation method:
1. Start by preparing the vegetables. Slice the green onions and leek, and dice the bell peppers. Peel and finely chop the carrot and celery. Cut the potatoes into cubes, and peel and chop the tomatoes. These will add a fresh note and delicate texture to the soup.
2. In a large pot, add a little oil and heat it over medium heat. Add the green onions, leek, bell pepper, carrot, and celery. Sauté the vegetables for 5-7 minutes until they become slightly translucent and the flavors combine.
3. Add 4 liters of water to the pot and bring to a boil. Once the water starts to boil, add the pork bones and let them boil for 10 minutes to release the flavors.
4. After that, add the potatoes, green beans, peas, broccoli, cauliflower, peeled and chopped tomatoes, rice, and kohlrabi. Season with salt and pepper to taste. Let the soup simmer on low heat for 30-40 minutes until the vegetables are cooked but still crunchy.
5. About 10 minutes before turning off the heat, add the borscht and tomato juice. These ingredients will give the soup a pleasant acidity and vibrant color. Remove the kohlrabi slices to prevent them from breaking down in the soup.
6. Two minutes before turning off the heat, add the couscous. It will puff up and add a nice consistency to the soup.
7. After you have turned off the heat, sprinkle fresh chopped parsley and lovage to taste. These herbs will enhance the flavor of the soup.
Serving suggestions:
Pork bone soup is served hot, alongside a slice of fresh bread or with croutons. You can add a tablespoon of sour cream for extra creaminess if desired.
Variations:
