Ingredients

For the batter:
- 5 eggs
- 60 g sugar
- 50 g dark chocolate
- 2 tablespoons flour
- 2 tbsp starch
- 3 tbsp cocoa
- 1 baking powder

For the cheese balls
- 350 g sweet cheese
- 80 g coconut
- 100 g sugar
- 2 yolks
- 4 level tablespoons starch

For the cream
- 600 ml whipped cream
- 300 g berries (fresh or frozen)
- 200 g sugar
- 10 g gelatine

For the cocoa glaze
- 200 ml water
- 230 g sugar
- 150 ml cream
- 75 g cocoa
- 10 g gelatine

Preparation

Step 1: Prepare the cheese balls
1. In a bowl, add the sweet cheese, sugar, coconut, yolks and starch. Mix well until smooth. If the mixture seems too soft, you can add 1-2 tablespoons of coconut for a firmer consistency.
2. Using damp hands, form the cheese mixture into balls and place them in an oiled and floured baking pan.

Step 2: Prepare the pastry
1. Preheat the oven to 160°C (low heat).
2. In a large bowl, beat the egg yolks with the sugar until lightly foamy. Add the cooled, melted chocolate, mixing well.
3. Si sift the flour, starch, cocoa, cocoa and baking powder into the yolk mixture and stir gently.
4. Beat the egg whites until stiff foam and gradually fold them into the chocolate mixture, stirring carefully so as not to lose any air from the whites.
5. Pour the whipped topping mixture over the cheese balls in the tray and bake for 45-50 minutes. The shortbread is ready when a toothpick inserted in the center comes out clean.
6. After baking, allow the shortbread to cool completely in the tray before removing.

Step 3: Making the fruit cream
1. Place the berries in a saucepan with the sugar and cook over medium heat for 15 minutes, stirring occasionally. After boiling, allow to cool thoroughly.
2. Hydrate the gelatine according to the packet instructions and add to the fruit mixture, stirring well.
3. Beat the whipping cream until stiff and fold gently into the fruit mixture.

Step 4: Assemble the cake
1. Place the top on a platter and secure a removable ring around it.
2. Pour the fruit cream over the top, spreading evenly. Refrigerate the cake for 2-3 hours so that the custard sets.

Step 5: Prepare the icing
1. In a bowl, mix the water, sugar, cream and cocoa. Place the mixture over low heat, stirring constantly until the sugar dissolves completely.
2. Remove the mixture from the heat and add the hydrated gelatin, stirring quickly to make sure it dissolves completely.
3. Allow the glaze to cool, stirring occasionally. When cool but still fluid, pour the glaze over the chilled cake.

Step 6: Final cooling
1. Refrigerate the cake for 8-10 hours, ideally overnight, to allow the frosting to set.

Decorating and serving
1. Once the cake has set, run a knife around the edge of the ring to loosen it slightly. Remove the ring and decorate the cake with chocolate chunks, which you can make by melting the chocolate and rolling it out on baking paper into irregular shapes, sprinkling golden bonbons on top.
2. Add some chocolates and fresh berries for an eye-catching look.
