Ingredients:
- 400 g flour
- 25 g fresh yeast (or 7 g dry yeast)
- 100 g sugar
- 1/2 teaspoon salt

- 3 egg yolks
- 250 ml warm milk
- 50 g melted butter (optional, for extra flavor)
Preparation:
1. Start by preparing the ingredients. Make sure the milk is warm, not hot, to activate the yeast without killing it. If using fresh yeast, crumble it and mix it with a tablespoon of sugar and a few tablespoons of warm milk, letting it sit for 5-10 minutes until it becomes frothy.
2. In a large bowl, combine the flour, activated yeast (or dry yeast), sugar, salt, and shredded coconut. Mix the dry ingredients well to ensure the yeast and sugar are evenly distributed throughout the mixture.
3. Add the egg yolks, warm milk, and vanilla extract. If you want an even richer flavor, you can also add the melted butter at this stage. Knead the dough for about 5-8 minutes until it becomes elastic and smooth. If the dough is too sticky, you can add a little more flour, but be careful not to overdo it.
4. Cover the bowl with a clean towel and let the dough rise in a warm place for 30-40 minutes, or until it doubles in size. This step is essential for achieving fluffy and airy nests.
5. Once the dough has risen, preheat the oven to 180°C and prepare a baking tray lined with parchment paper. Divide the dough into 12 equal portions and shape them into balls. Place them on the tray, leaving enough space between them to expand during baking.
6. Bake the nests in the preheated oven for 20-25 minutes, or until they turn golden and fluffy. It is important to watch them closely to avoid drying out.
7. After removing them from the oven, let them cool on a wire rack. These coconut nests are delicious both warm and cold.
