Ingredients:
- 200 g smoked mackerel fillet (or grilled)
- 1 can of corn (about 300 g)

- Salt and pepper to taste

Instructions:
1. Preparing the ingredients: Start by opening the can of corn and draining it well. Wash the bell pepper and cucumber, then cut them into small cubes. The red onion should be finely chopped to easily incorporate into the salad.
2. Preparing the fish: If using smoked mackerel fillet, make sure it is cut into small pieces, about 2-3 cm. If you prefer grilled mackerel, cook it on a grill pan or barbecue for 3-4 minutes on each side until golden and easily flakes off the grill.
3. Assembling the salad: In a large bowl, combine the corn, bell pepper, cucumber, and onion. Add the pieces of mackerel and gently mix to avoid breaking the fish.
4. The dressing: In a small bowl, mix the extra virgin olive oil with the balsamic vinegar, salt, and pepper. Pour this dressing over the salad and mix well to combine the flavors.

We clean the fish from bones (there aren't many) and the skin on top, then cut it into smaller pieces. Chop the onion finely. You don't necessarily need green onion, but it adds color to the salad. Now for the corn kernels. You can use canned or fresh kernels, as I did because I had some corn at home (boil the corn first and then remove the kernels, not the other way around). In a large bowl, combine the fish, finely chopped onion, corn, and mix. Then add mayonnaise to bind the ingredients and finally the juice of a lemon; I used the juice of one lemon, but taste and add according to your preference.
