Recently, I made these little balls again with two types of composition, white and black. I found it quicker to separate the ingredients from the start, so I prepared everything in two large bowls. I had no issues with the consistency; it didn't need to be refrigerated, but I noted that it might be necessary if you find it hard to shape. The butter should be left at room temperature; otherwise, it won’t mix well.

Quick Info

Total Time: about 40-50 minutes, including shaping
Preparation Time: 30-40 minutes
Cooking Time: no baking required
Servings: 35-45 pieces, depending on size
Difficulty: easy
Recipe Type: quick dessert, no-bake, suitable for festive platters or snacks

Ingredients

Black Balls
500 g nut biscuits, very crumbly (ideally homemade)
50 g powdered sugar
100 g ground walnuts
70 g muesli with dried fruits (processed in a food processor or finely chopped)
150 ml milk, at room temperature
1 vial rum essence
2 tablespoons cocoa

White Balls
250 g milk powder
200 g powdered sugar
200 g butter (at room temperature)
150 g coconut
1 vial almond essence

For Decoration
granulated sugar
coconut

Preparation Method

1. In a large bowl, place the crushed nut biscuits. If they are not crumbly enough, process them in a food processor.
2. Add the powdered sugar, ground walnuts, crushed muesli, cocoa, and mix.
3. Incorporate the milk and rum essence. Mix well by hand or with a spoon until everything binds together. The mixture should be homogeneous and easy to shape but not sticky. If it’s too soft, it can be refrigerated for 20-30 minutes.
4. In a separate bowl, place the milk powder, powdered sugar, and coconut.
5. Add the softened butter and almond essence, then mix well until you get a shapeable mixture.
6. If one of the mixtures is too soft, you can put it in the fridge for a short time. Most of the time, this is not necessary.
7. Take from each mixture and shape balls by hand, to the desired size.
8. Roll the black balls in granulated sugar and the white ones in coconut.
9. Place them on a platter. They can be consumed immediately, but the texture is even better after being chilled for at least an hour.

Why I make this recipe often

It’s a recipe I return to because it’s quick to prepare, requires no baking, and I can use ingredients I usually have at home. They keep well in the fridge for a few days and don’t dry out quickly. If I have guests, I can prepare a whole tray effortlessly.

Tips and Variations

Tips
The mixture should be shapeable. If it seems too soft, do not add more dry ingredients at first; try refrigerating the bowl first.
The butter should be soft; otherwise, it doesn’t incorporate easily and leaves lumps.
The ideal biscuits are nut ones, not too sweet, and soft enough to crumble easily.

Substitutions
The muesli with dried fruits can be replaced with other flakes or finely chopped dried fruits if you don’t have the exact type.
Rum and almond essences can be omitted or replaced with another preferred flavor.

Variations
You can make just one mixture, not both, if you want. You can shape only black balls or only white ones.
You can add small pieces of chocolate inside for a different texture.
If you want a different look, you can roll the white balls in granulated sugar and the black ones in cocoa, but the base mixtures turn out better in their original versions.

Serving Ideas
They can be placed in mini paper cups for a neater appearance.
On a platter, the black-and-white look is more attractive.
They are suitable for festive platters or as a quick dessert with coffee.

Frequently Asked Questions

1. What type of biscuits is suitable for black balls?
Nut biscuits, soft and crumbly, are the most suitable. They can also be plain, but homemade dry biscuits give a better taste.

2. Can the balls be made without muesli?
Yes, the muesli can be replaced or omitted. Alternatively, you can put something similar – oats or other finely chopped dried fruits.

3. The mixture is too soft and doesn’t shape. What should I do?
Refrigerate the bowl for 20-30 minutes. If it still doesn’t bind, add a little more crushed biscuits or coconut, depending on the mixture.

4. How long do the balls last after being made?
They keep well in the fridge, in a closed container, for about 3-4 days. They don’t dry out easily if the butter and biscuits had the right texture.

5. Can I use margarine instead of butter?
You can use it, but the taste and texture will change. Butter gives the mixture more creaminess.

Nutritional Values

The values are indicative. For 100 g of black or white balls:
Calories: 350-400 kcal
Protein: 5-7 g
Carbohydrates: 45-55 g
Fats: 15-22 g
These vary depending on the type of biscuits, the exact amount of nuts, muesli, and the type of butter. They are dense sweets, suitable for small portions.

Storage and Reheating

The balls are stored in the fridge, in a container with a lid, for up to 4 days. They do not need reheating. They can be consumed directly from the fridge or after a few minutes at room temperature. If they sit too long in the heat, they can become too soft, especially the white ones with butter.
