Spinach and cheese roll - a savory and colorful recipe that combines the fresh taste of vegetables with the richness of cheese. This dish is perfect for a light lunch, a quick dinner, or as an appetizer at a party. Whether you are a beginner or an experienced cook, this simple recipe will surely become one of your favorites.

Preparation time: 20 minutes
Baking time: 30 minutes
Total: 50 minutes
Servings: 6

Ingredients:
- 400 g fresh spinach (or frozen)
- 1 medium onion, finely chopped
- 200 g feta cheese or grated cottage cheese
- 2 tablespoons fresh dill, chopped
- 4 eggs
- 100 g flour
- A pinch of salt
- A pinch of pepper
- Olive oil for sautéing

Filling preparation:
1. Start by heating a tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent and slightly golden. This step will add a delicious flavor to your dish.
2. If using fresh spinach, wash it well and chop it into smaller pieces. Add it to the sautéed onion in the pan. If using frozen spinach, make sure it is thawed and well-drained before adding. Cook the spinach with the onion for 2-3 minutes until it wilts.
3. Once the spinach is ready, add the grated cheese and chopped dill. Mix well so that the cheese melts slightly, integrating into the filling. Season with salt and pepper to taste. Let the filling cool slightly.

Roll preparation:
1. In a large bowl, beat the four eggs with a pinch of salt and pepper. Gradually add the flour and mix until you obtain a smooth batter. This will be the base of your roll.
2. Preheat the oven to 180°C (350°F) and prepare a baking tray lined with parchment paper. Make sure the paper is well spread so that the roll does not stick.
3. Pour the batter into the tray and level it evenly. Bake in the oven for 15-20 minutes, or until the surface is firm and slightly golden. A useful trick is to check with a toothpick; if it comes out clean, the batter is ready.
4. After baking, remove the tray from the oven and let the roll cool for 5 minutes. Then, carefully turn the roll onto a damp kitchen towel, removing the parchment paper.

Assembling the roll:
1. Spread the spinach filling evenly over the cooled roll, leaving a 1-2 cm margin. This step is essential to avoid leaks when rolling.
2. Start rolling carefully, using the towel to help form a tight roll. Make sure the filling remains well distributed along the length of the roll.
3. Once fully rolled, you can secure the roll with a piece of thread or plastic wrap, allowing it to rest for 10-15 minutes to keep its shape.

Serving and suggestions:
The spinach and cheese roll can be served warm or cold, sliced into thin pieces. A delicious idea is to add it to a platter alongside a fresh green salad or serve it with garlic yogurt sauce. You can experiment by adding black olives, red peppers, or even nuts to the filling for a crunchy and savory touch.
