Ingredients
- 500 g champignon mushrooms
- 200 g long-grain rice (recommended: Uncle Ben’s, in packets)
- 5 cloves of garlic
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon chili powder
- 1 teaspoon tomato paste
- Sea salt, to taste
- Freshly ground pepper, to taste
- Diet mayonnaise (vegan, from UNIVER)
- Spicy ketchup (from OLIMPIA)

Brief History
The mushroom rice recipe is inspired by the tradition of simple and healthy cooking, where basic ingredients harmoniously blend to create a tasty dish. Mushrooms have been appreciated over time for their flavor and nutritional benefits, being an excellent source of vitamins and minerals.

Preparation Method

1. Cook the rice: Start by placing the rice in boiling water, following the instructions on the package. If using Uncle Ben’s long-grain rice, 2 packets are sufficient for 4 servings. Let it simmer on low heat for 20 minutes, stirring occasionally to prevent sticking.

2. Prepare the mushrooms: In a large skillet, add the butter and let it melt over medium heat. Add the whole mushrooms and sauté for 10 minutes, stirring constantly to evenly coat them with butter.

3. Add the garlic: Cut the 5 cloves of garlic in half and add them to the skillet. Place a lid over the skillet and let the mushrooms steam for 3 minutes. This step will help develop the flavors.

4. Season: After 3 minutes, lift the lid and gently stir the mushrooms. Add the chili powder and thyme, but don't stir too much, or the ingredients will burn. Replace the lid and let the mushrooms cook for another minute.

5. Finalize: Once the mushrooms are perfectly cooked, transfer them to a bowl. Wait for the rice to be ready, then drain it well and add it to the bowl with the mushrooms. Add a cube of butter, a little thyme, a dash of chili powder for color, a teaspoon of tomato paste, sea salt, and freshly ground pepper. Mix well to combine all the flavors.

Serving

To serve, take a large plastic spoon and form an oval portion of rice on a plate. Top it with the spicy ketchup, followed by the mushrooms. Finish with a spoonful of diet mayonnaise, which will add a creamy and tasty note to the dish. This combination of flavors will make it a delight for the meal!

Practical Tips
- Choose quality ingredients: Use fresh mushrooms and quality rice for the best results.
- Don't completely cover the skillet: When cooking the mushrooms, make sure the lid is slightly raised to allow air to circulate, thus avoiding excessive condensation.
- Experiment with spices: If you like spicy food, you can add a splash of chili sauce or other favorite spices.

Nutritional Benefits
Mushrooms are low in calories, rich in B, D vitamins, and essential minerals, while whole grain rice provides fiber that aids digestion. Together, these ingredients make a nutritious meal, ideal for those looking to maintain or lose weight.

This spicy mushroom rice recipe is not just a delicious meal but also an excellent way to enjoy intense flavors and satisfy your taste buds. Try it and enjoy every bite! Bon appétit!

Boil the rice; I recommend Uncle Ben's long-grain rice as it comes portioned for two people in four packets. I used 2 packets for 4 people and let it simmer on low heat for 20 minutes. During this time, sauté the whole mushrooms in a pan with butter, allowing them to cook for 10 minutes. Stir them well in the butter, add 5 garlic cloves cut in half, then cover the pan with a large lid after sautéing them over medium heat; keep the lid on for 3 minutes to let them steam a bit. After lifting the lid, stir the mushrooms again and sprinkle a little paprika and thyme over them; BE CAREFUL NOT TO MIX THEM!!!! Immediately cover the pan again and let it sit for another minute. Lift the lid, turn off the heat, and transfer the mushrooms to a bowl. Wait a bit for the rice to finish cooking, then turn off the heat, drain it well, transfer it to a bowl, add a cube of butter, thyme, a pinch of paprika for color, a teaspoon of OLIMPIA tomato paste, sea salt to taste, and freshly ground pepper; mix well. Once both dishes are ready, plate them as follows: With a large plastic spoon, take the rice and place two spoonfuls on the plate, shaping it into an oval form, and add hot ketchup from OLIMPIA on top; then place the mushrooms on the plate and add UNIVER diet mayonnaise (it has a different taste and is very healthy, it won't make you gain weight!). This is a recipe for those who love spicy and well-seasoned dishes! Don't forget to keep the lid slightly ajar from the pan to allow some air in, otherwise it may create condensation or make the dishes too soggy!!! And remember when adding ingredients like paprika and thyme not to stir the mushrooms in the pan as the ingredients will burn that way.
