Clean and wash the vegetables well, then chop them finely according to everyone's preference. This first step is essential, as the proper preparation of the vegetables will influence both the texture and the final taste of the dish. You can choose your favorite vegetables: carrots, peppers, zucchini, or even onions, each playing its role in creating a delicious combination. After you finish chopping the vegetables, you can put them in a large bowl, where you will mix them well to ensure they combine harmoniously.

To intensify the flavors, it is recommended to put them in a pot with boiling water and boil for one minute. However, I prefer to boil them a little longer to maintain their crunchiness and enhance the flavors. So, after adding the vegetables to the water, let them boil for about 3-5 minutes, being careful not to overboil them. This will help maintain the vibrant colors and essential nutrients, ensuring that the final dish will be not only tasty but also healthy.

After boiling the vegetables, it is important to drain them well and set them aside. In a large skillet, add a little olive oil or butter to create a friendly environment for your vegetables. When the oil is heated, you can add the boiled vegetables, stirring constantly to distribute the heat evenly. At this point, you can add spices to taste: salt, pepper, oregano, or even a pinch of chili for a touch of spiciness.

After the vegetables have been sautéed for a few minutes, you can serve them warm, as a side dish or as a vegetarian main course, alongside rice or a fresh salad. This dish is versatile and can be adapted according to the season and your culinary preferences. Additionally, it is an excellent way to incorporate vegetables into your daily diet, offering both flavor and essential nutrients. Enjoy your meal!

 Ingredients: - 1 kg of white fish fillet (I used pangasius) - a bunch of fresh parsley - 3 small carrots - 2-3 celery stalks - 2 handfuls of frozen peas - 2 handfuls of frozen green beans - a small cauliflower (I didn't add this) - a small celery - 2 tablespoons of breadcrumbs - 150 g of sour cream - 2 eggs - 150 g of butter - 100 g of grated cheese. Salt, pepper, and spices to taste. I also added: - a red bell pepper - a handful of corn kernels - another 100 g of smoked grated cheese.
