For the chocolate glaze:
- Milk (depending on how thin you want the glaze)
- 100 g dark chocolate
For decoration:
- 200 ml liquid cream
- Sprinkles or other sugar decorations
Step by Step Preparation
1. Preheat the oven
Start by preheating the oven to 180 degrees Celsius. This step is essential to ensure even baking of the layers.
2. Preparing the sponge
In a large bowl, separate the egg whites from the yolks. Add a pinch of salt to the egg whites and mix with a mixer until they become foamy. Gradually add the sugar, continuing to mix until you achieve a stiff and glossy foam.
In another bowl, add the 5 yolks (keep one for the butter cream) and incorporate them one by one into the egg white mixture. Slowly pour in the oil while continuously mixing. Add the baking powder and flour, gently folding with a spatula to maintain the aeration of the mixture.
3. Dividing the mixture
Divide the mixture into three bowls: in one, add a tablespoon of cocoa, while the other two parts remain white.
4. Baking the layers
On a baking tray lined with parchment paper, pour the first white mixture and bake for 15 minutes or until golden. Once done, remove the layer onto a rack and repeat the process for the other two layers.
5. Preparing the syrup
While the layers are baking, prepare the syrup. Put water and sugar in a small pot over low heat and let it boil for 5 minutes, stirring occasionally.
6. Butter cream
In another bowl, prepare a syrup from 3 tablespoons of sugar and 30 ml of water, leaving it on the heat until the sugar melts. Gently mix in the yolk and pour the syrup while mixing. Let it cool slightly, then add the butter cut into cubes, cocoa, coffee, and mix well until you obtain a smooth cream.
7. Milk and cocoa cream
In a saucepan, mix the milk, flour, sugar, and vanilla seeds. Cook over low heat, stirring constantly until thickened. Remove from heat and add the butter, cocoa, and coffee, mixing well.
8. Chocolate glaze
Heat the milk (do not boil it!) and add the chocolate broken into pieces. Mix well until you obtain a smooth glaze. Let it cool slightly.
9. Assembling the cake
On a platter, place the first white layer, lightly syrup it, then spread the butter cream (keep a tablespoon for decoration). Then, place the cocoa layer and cover with the second cream. Finally, put the second white layer and pour the chocolate glaze on top. Let the cake cool in the fridge for 30 minutes.
10. Decorating
Whip the liquid cream until it becomes thick and creamy. Use it to decorate the cake, adding sprinkles or other sugar decorations for a festive look.
