It is said that meat roll is one of the most versatile and beloved dishes in our cuisine. When it comes to serving a dish that combines savory taste with an attractive appearance, this recipe is definitely a winner. Whether served warm with a generous side dish or cold as an appetizer, the meat roll will win all hearts. Here’s how to prepare this delicacy step by step!
Ingredients
- 750 g ground pork
- 2-3 roasted peppers
- 1 large onion
- 1/2 can of mushrooms
- 3-4 cloves of garlic
- 2 potatoes
- 2 slices of bread (preferably baguette)
- 1 bunch of dill
- 1 bunch of parsley
- 1 raw egg
- 2-3 boiled eggs
- 200 g sausages (preferably smoked)
- Salt and pepper to taste
- Oil for greasing
Preparing the roll
1. Preparing the potatoes: Start by peeling the 2 potatoes and grating them. Once done, place them in a sieve and wash them with cold water. This step is essential to remove excess starch, making the roll less moist. Let the potatoes drain well.
2. Chopping the vegetables: While the potatoes are draining, finely chop the onion, dill, and parsley. These will add extra flavor and freshness to the mixture.
3. Mixing the ingredients: In a large bowl, place the ground meat, onion, dill, parsley, raw egg, and crushed garlic cloves. Now, add the well-drained grated potatoes.
4. Preparing the bread: Place the 2 slices of bread in a bowl with warm water for 2-3 minutes. This will soften it and make it easier to mix, helping bind the mixture. After it has softened, remove the bread, squeeze out the excess water, and crumble it over the ground meat.
5. Seasoning: Add salt and pepper to taste, mixing all the ingredients well. Make sure everything is homogenized, and the flavors blend perfectly.
Forming the roll
6. Preparing the baking paper: On a piece of baking paper, spread the meat mixture evenly. Use a spatula to form a rectangular shape, about 1-2 cm thick.
7. Adding the filling: In the center of the mixture, place the sausages, which you can wrap in roasted peppers. This detail will add a special flavor to the roll. On either side, place the mushrooms and boiled eggs cut in halves or quarters.
8. Rolling: Start rolling using the baking paper. Be careful not to break the mixture, rolling gently. After rolling halfway, peel off the paper and continue rolling, sealing the edges of the roll.
Baking
9. Preparing for the oven: Place the roll, along with the baking paper, in a loaf pan. Cut off the excess paper from the edges. Moisten the roll with a little oil to achieve a golden and delicious crust.
10. Baking: Preheat the oven to low heat (about 160°C) and bake the roll for about 75 minutes. It is important to bake it at low heat to allow the meat to cook through well and avoid drying out.
11. Finalizing: After the baking time is up, remove the roll from the pan and place it on a larger tray, with the browned side down. Moisten again with oil and leave it in the oven for another 10 minutes to achieve an even more appetizing crust.
Serving
The ground meat roll can be served both warm, alongside a generous side of mashed potatoes or sautéed vegetables, and cold, sliced thinly as an appetizer. A delicious combination of flavors and textures will turn every meal into a special occasion.
