Pork head with garlic
To prepare a delicious head, we will start by thoroughly cleaning it under a stream of cold water, ensuring it is ready to be cooked. Then, we place it in a large pot, adding enough water to completely cover it. Here, we will also add a good handful of salt, a few peppercorns, a bay leaf, as well as 6-7 whole garlic cloves to provide an extra flavor. Additionally, a splash of Delikat will enhance the taste, bringing a perfect balance between all the ingredients.
We put the pot on medium heat and let the head boil, ensuring that the foam formed on the surface is removed, thus obtaining a clear and aromatic broth. After about 1-2 hours, depending on the size of the head, it will be well boiled, and the meat will easily separate from the bones. Using a skimmer, we take the head out of the pot and let it cool slightly.
Once it has cooled, we will start removing the bones, being careful to keep all the meat. At this point, the meat will be salted to taste, and then we will sprinkle paprika generously so that each piece is well seasoned. It is essential that the paprika is of good quality to give the dish a vibrant hue and an unmistakable taste.
In a separate bowl, we crush 5 garlic cloves, which we will rub well with salt and olive oil. This mixture should become creamy, similar to mayonnaise, so we can gradually add water to thin it out until we reach the desired consistency. Once we have obtained the garlic sauce, we will carefully pour it over the head meat, ensuring it is evenly distributed.
After completing this step, it is time to let the dish cool in a covered container for a few hours. This resting time is crucial as it allows the flavors to blend and concentrate, transforming a simple boiled head into a savory dish full of personality. With every bite, you will feel the perfect combination of spices, and the meat will be so tender that it will melt in your mouth. This dish can be served as is or alongside a side of grilled vegetables or a fresh salad, bringing a touch of freshness to every meal.
