Preparation time: 10 minutes
Cooking time: 30 minutes
Total time: 40 minutes
Number of servings: 4
Necessary ingredients:
- 1 large onion
- 2 cloves of garlic
- 1 carrot
- 150 g celery
- 800 g canned peeled tomatoes (or fresh, if you prefer)
- 1.5 l water
- 4 slices of HapiHap bread (or any other type of preferred bread)
- Fresh basil leaves
- Salt and pepper, to taste
- Olive oil (optional, for a refined taste)
Step 1: Preparing the ingredients
To achieve a delicious tomato cream soup, make sure you have all the ingredients at hand. Chop the onion, garlic, carrot, and celery into small cubes. This will help with even and quick cooking.
Step 2: Boiling the vegetables
In a large pot, add 1.5 liters of water and bring it to a boil. Add the onion, garlic, carrot, and celery. Cover the pot and let the vegetables boil over medium heat for about 20 minutes until the carrot becomes soft.
Step 3: Adding the tomatoes
Once the vegetables are boiled, add the canned peeled tomatoes. If you are using fresh tomatoes, make sure you have peeled them and cut them into cubes. Let the mixture simmer for a few minutes so that the flavors combine harmoniously.
Step 4: Blending
Remove the pot from the heat and use an immersion blender to create a smooth texture. You can add a handful of fresh basil leaves while blending for extra flavor. If you want a lighter soup, you can add a little olive oil during blending.
Step 5: Preparing the croutons
While the soup cools slightly, you can prepare the croutons. Place the slices of HapiHap bread in a toaster or a non-stick pan. Toast them on both sides until golden and crispy. Cut them into small cubes, suitable for sprinkling on top of the soup.
Step 6: Serving
Pour the tomato cream soup into deep plates, add the croutons on top, and garnish with a few fresh basil leaves.
Serving suggestion: This soup pairs perfectly with a fresh green salad or a light sandwich. You can also sprinkle some grated parmesan on top if you are not vegetarian.
Possible variations: You can experiment with additions such as roasted bell peppers, chili for a spicy taste, or cream for a creamier texture. Also, if you want a spicier soup, you can add a few drops of hot sauce.
Tomato cream soup is not only delicious but also healthy. It is your friend on fasting days due to its light and nutritious ingredients. Enjoy this dish with your loved ones at a table full of stories and laughter!
