Preparation time: 30 minutes
Baking time: 30 minutes
Total time: 1 hour
Servings: 10

Your ingredients for a delicious cake:

*For the sponge:*
- 4 large, fresh eggs
- 1 cup of flour (about 120 g)
- 1 cup of sugar (about 200 g)
- 4 tablespoons of oil (sunflower or canola)
- 2 tablespoons of cocoa powder (for a rich flavor)
- A pinch of salt (to balance the sweetness)

*For the cream:*
- 1 large can of peach compote (about 800 g)
- 800 ml plain yogurt (choose a quality yogurt without additives)
- 3 tablespoons of sugar (adjust to taste)
- 300 ml of whipped cream (for a fluffy texture)
- 10 g of gelatin (to keep the cream firm)
- 1 packet of vanilla sugar (or 1 teaspoon of vanilla extract)

Step by step to a perfect cake:

1. Preparing the sponge:
Start by preparing the sponge. In a large bowl, beat the egg whites with a pinch of salt until frothy. Gradually add the sugar and continue mixing until you achieve a glossy foam that holds firm peaks. This is the perfect base for a fluffy sponge.

2. Incorporate the yolks:
Add the yolks one at a time, gently folding with a spatula to avoid losing the air in the mixture. This step is essential for achieving an airy sponge.

3. Add the dry ingredients:
Mix the flour with the cocoa powder and gradually add them to the egg mixture. Use a spatula to fold, being careful not to overmix.

4. Incorporate the oil:
Finally, pour in the oil and mix until well combined. The oil will add moisture and make the sponge softer.

5. Bake the sponge:
Preheat the oven to 180°C. Pour the sponge mixture into a 24 cm round cake pan lined with parchment paper. Bake for about 25-30 minutes or until a toothpick comes out clean. Allow the sponge to cool on a wire rack.

6. Preparing the cream:
For the cream, mix the yogurt with the sugar and vanilla in a bowl. In another small bowl, hydrate the gelatin in 3 tablespoons of syrup from the peach compote. Then, gently heat the gelatin in the microwave until completely dissolved.

7. Combine the gelatin with the yogurt:
Add a tablespoon of yogurt to the dissolved gelatin and mix well. Then pour the gelatin into the rest of the yogurt and refrigerate for about 10-15 minutes until it thickens slightly.

8. Incorporate the whipped cream:
Whip the cream until it holds firm peaks, then gently fold it into the yogurt mixture. Finally, add the finely chopped peaches from the compote.

9. Assemble the cake:
On a serving platter, place the first sponge layer, lightly soaking it with the syrup from the compote. Fit a cake ring around the sponge. Spread half of the yogurt and peach cream, then place another sponge layer, soak it, and repeat the process.

10. Finalizing the cake:
Place the last sponge layer on top, refrigerate the cake, ideally overnight, to allow it to set properly.

11. Serving:
The next day, remove the cake ring and decorate with whipped cream and slices of peaches from the compote. This peach and yogurt cake is not only a treat for the taste buds but also a true visual feast!

Helpful tips for a perfect cake:
- Ensure all ingredients are at room temperature for better mixing.
- If you want to add a hint of flavor, you can use a bit of lemon or orange zest in the yogurt cream.
- The cake can be stored in the refrigerator for up to 3 days, but it tastes best the day after it's made.
- You can substitute peaches with other fruits from the compote, such as pineapple or cherries, for a different variation.

Nutritional benefits:
This cake is not only delicious but also lighter than many other calorie-rich desserts. Yogurt provides beneficial proteins and probiotics, while peaches add a dose of vitamins and antioxidants. Without forgetting the delightful taste, the peach and yogurt cake is a healthier choice for celebrations.

Healthy variation:
If you want to reduce the sugar even further, you can use natural sweeteners like honey or maple syrup. You can also opt for Greek yogurt, which is richer in protein.

Pair this cake with fresh lemonade or fruit tea for a perfect culinary experience. Whether you serve it at a birthday party or simply to celebrate a special day, the peach and yogurt cake will bring smiles and unforgettable moments. Embark on the cooking adventure and enjoy every step!
