Mexican Garnish of Roasted Peppers
To create a delicious and flavorful dish, start by roasting the peppers. Place them on a baking tray and put them in the preheated oven at 200 degrees Celsius. Roast them evenly, turning them occasionally, until the skin becomes charred and starts to peel off. This process takes about 20-25 minutes. Once roasted, sprinkle them with salt and transfer them to a covered dish. Let them sit for 10 minutes to cool slightly. This will make peeling the skin easier. After they have cooled, peel off the skin, carefully collecting the juices left in a bowl. Remove the stems and seeds, then cut the peppers into thin strips or tear them by hand, as preferred.
Meanwhile, prepare the potatoes. Peel and cut them into equal-sized cubes to cook evenly. Boil them in salted water, ensuring the water is well-salted. Cook for about 10-15 minutes or until they become tender, then drain and set aside.
In a large skillet, add oil and let it heat up. When the oil is hot, add finely chopped onion along with sliced chili pepper. Sauté the mixture for about 10 minutes, stirring constantly to prevent burning. The onion should become translucent and slightly caramelized. Once the onion has turned golden, add the pepper strips and the juices you collected earlier. Continue to cook over medium heat for another 5 minutes to combine the flavors.
Now is the time to add the drained corn and the boiled potatoes. In a separate bowl, dissolve the flour in sour cream, mixing well to avoid lumps. Add the sour cream and flour mixture to the skillet, stirring constantly to incorporate the ingredients well. Let the mixture simmer on low heat, stirring frequently until it thickens slightly.
Finally, taste the mixture and add salt, pepper, and a bit of chili to your liking. You can also add finely chopped parsley for an extra touch of freshness. Serve the dish while it is warm, alongside a green salad or fresh bread to complete the meal.
