Farfalle with Cheese, Smoked Cheese, and Sour Cream

Ingredients: -300 g pasta -50 g grated cheese -100 g cow's telemea -50 g sheep telemea / brined cheese -150 g processed cheese, in a tube -100 g sour cream -2 tablespoons oil -freshly ground pepper, to taste -salt -a few sprigs of dill, finely chopped, optional

To prepare a delicious cheese pasta recipe, start by boiling 2 liters of water in a large pot. Add a teaspoon of salt to the water to enhance the flavor of the pasta. When the water has started to boil, add your favorite pasta—whether it’s spaghetti, penne, or fusilli—and let it cook according to the package instructions, about 7-8 minutes, until al dente. Make sure to stir occasionally to prevent sticking. Once the pasta is cooked, drain it in a colander and set it aside.

In a deep skillet, heat a few tablespoons of olive oil over low heat. It’s important not to overheat the oil, as we want to melt the cheese evenly. Add the grated cheese and melted cheese to the hot oil, stirring continuously with a silicone spatula or wooden spoon to prevent sticking. You will notice how the cheese starts to melt and becomes creamy, creating a delicious base for the pasta.

Once the cheese is completely melted and has a uniform consistency, add the drained pasta to the skillet. Stir well so that each piece of pasta is coated with the cheese sauce. This step is essential to ensure an even distribution of flavors. Then, incorporate the grated telemea cheese, which will add a salty note and an interesting texture to the dish.

After the telemea has fully integrated, add the sour cream, which will bring extra creaminess and balance the intense flavors of the cheese. Sprinkle freshly ground pepper to taste and stir gently over low heat, allowing the ingredients to combine perfectly. For an extra touch of freshness, add finely chopped dill if desired. This will bring a fresh flavor and a splash of color to the dish.

Serve the pasta while it's still warm, to enjoy all the flavors. You can sprinkle a few dill sprigs or some grated cheese on top for an appealing look. This cheese pasta is ideal for a quick dinner but also for impressing guests on a special occasion. Bon appétit!
