To prepare this delicious stuffed pretzel recipe, start by dissolving the yeast in a little warm water, letting it rest for a few minutes until it becomes frothy. Meanwhile, prepare the syrup from water and sugar by boiling it for about 3 minutes, then let it cool. This syrup will add a sweet and moist note to your pretzels, being the secret element of the recipe.

After the yeast has risen, in a large bowl, mix the eggs, milk, and oil, then add the baking powder previously dissolved with a little vinegar or lemon juice to activate the reaction. Continue by incorporating the risen yeast, and finally, gradually add the flour, kneading until you obtain an elastic dough that no longer sticks to your hands. Once you have achieved the desired consistency, cover the bowl with a towel and let it rise in a warm place for about 1 hour, or until it doubles in volume.

After the dough has risen, divide it into two equal parts. In the first part, add the grated lemon zest, which will provide a fresh aroma, and in the other part, incorporate the cocoa. If you have difficulty mixing, you can gradually add a little oil to facilitate homogenization. After you have kneaded the two types of dough well, let them rise again, covered, for about 30 minutes.

After this interval, divide each dough into 8 equal balls, resulting in a total of 16 balls: 8 white and 8 black. Use a rolling pin to roll each ball into a thin sheet. Stack the obtained sheets, then cut them into triangles, filling them with Turkish delight, ground nuts, chocolate, or any other preferred ingredient. Roll the triangles into pretzel shapes and place them on a baking tray lined with parchment paper.

Preheat the oven to a low heat and bake the pretzels until they turn golden. Once removed from the oven, dip each pretzel in the cold sugar syrup, which will give a delicious glaze. You can experiment with different fillings, from nuts and egg whites, inspired by the recipes for sweet bread, to find the perfect combination. These pretzels will not only look wonderful but will also delight the taste buds of everyone, surely becoming a favorite among loved ones.
