Recipe history:
Gizzard stew has deep roots in culinary tradition, being a dish that has been cooked in many cultures. Gizzards are considered a delicacy in numerous cultures, having a unique texture and rich flavor. This recipe highlights not only the flavor of the gizzards but also the perfect combination of vegetables and spices, offering a comforting and nourishing meal.

Step by step, for a perfect stew:

1. Preparing the gizzards: Start by thawing the gizzards. If you have frozen gizzards, you can place them directly in a pressure cooker. Add enough water to completely cover them. Boil for about 20 minutes. This step will ensure that the gizzards become tender and easy to cook further.

2. Preparing the vegetables: While the gizzards are boiling, peel the onion and carrot. Cut the onion into small pieces and grate the carrot on a large grater. These vegetables will form the flavorful base of the stew.

3. Sautéing the vegetables: In a deep skillet or pot, add the oil and let it heat up. Add the onion and carrot, along with the bay leaf, sweet paprika, hot pepper (if you want a spicier taste), thyme, salt, and Worcestershire sauce. Sauté these vegetables over medium heat, stirring frequently, until the onion becomes translucent and the carrot softens.

4. Adding the bell pepper: Once the vegetables have softened, add the sliced bell pepper. Let them sauté together for about 5 minutes, until the bell pepper becomes slightly soft.

5. Combining the ingredients: Remove the gizzards from the pressure cooker and add them to the pot with the vegetables. Cut the potato into cubes and add it as well. Pour in warm water enough to cover all the ingredients, and let it simmer on low heat, covered, for about 20-30 minutes. This process will allow the vegetables to soften and the flavors to combine.

6. Finalizing the sauce: After the vegetables are well cooked, taste the stew and adjust with salt and pepper to your liking. Add the minced garlic and the tablespoon of tomato paste, mixing well. Let the stew simmer for a few more minutes for the sauce to thicken. If you find the sauce too liquid, mix the cornstarch with two tablespoons of cold water and pour it into the sauce, stirring constantly until it thickens.

7. Serving: Once the stew is ready and the sauce has the desired consistency, add the chopped parsley for an extra touch of freshness. Serve this delicious gizzard stew alongside a generous portion of warm polenta, which will perfectly complement the rich flavors of the dish.

Helpful tips:
- Choose quality gizzards: When selecting gizzards, make sure they are fresh and of high quality. These will significantly influence the final taste of the stew.
- Vary the vegetables: You can add or replace vegetables based on personal preferences. For example, the carrot can be replaced with celery or zucchini, and the potato can be swapped for sweet potatoes for a hint of sweetness.
- Try other spices: If you want to experiment, add herbs like oregano or basil for a different taste. Also, a splash of red wine can add an extra depth of flavor.

Ingredients: 500 g of gizzards, 1 large onion, 1/2 hot pepper (but it should be hot, if not, don't add it), 1 tablespoon sweet paprika, 1/2 bell pepper (note that in all recipes I use 1/2 pepper because they are huge here), 1 medium carrot, 1 large potato, 100 ml oil, 1 full tablespoon tomato concentrate, 1 teaspoon corn starch, Worcestershire sauce, soy sauce, pepper, salt, 1 bay leaf, a bit of thyme, 2-3 cloves of garlic, chopped parsley at the end.
