To prepare a delicious chicken breast recipe with tomatoes, we start by gathering the necessary ingredients. You will need 500 grams of chicken breast, one large onion, two ripe tomatoes, 3-4 tablespoons of olive oil, salt and pepper to taste, as well as various herbs such as basil or oregano, which will add extra flavor to your dish.
The first step is to prepare the ingredients. Slice the onion into thin scales, making sure to keep the pieces uniform for even cooking. Then, cut the chicken breast into cubes of about 2-3 centimeters, so they cook quickly and absorb the flavors from the sauce.
In a large skillet, heat the olive oil over medium heat. When the oil is hot, add the sliced onion and sauté for 2-3 minutes until it becomes translucent and releases its aroma. This will form the base flavor of your dish.
After the onion is sautéed, add the chicken cubes. Stir well to coat them evenly with oil and onion. Cook the chicken, stirring occasionally, until it turns golden and browns nicely on all sides, about 5-7 minutes. It is important not to overcrowd the skillet, so if you have a lot of chicken, it is recommended to cook it in two batches.
Once the chicken is browned, it's time to add the tomatoes. Cut the tomatoes into medium cubes and add them to the skillet. Stir well to combine all the ingredients. The tomatoes will release their juice and form a delicious sauce. Season with salt, pepper, and your favorite herbs. If you want a more intense flavor, you can also add a teaspoon of sugar to counteract the acidity of the tomatoes.
Let the dish simmer on low heat, covered, for 10-15 minutes, stirring occasionally. This way, the flavors will combine and the chicken will become tender. Finally, taste and adjust the seasoning if necessary.
