Oven-Baked Wolf Fish - a seafood delicacy that combines simplicity with elegance, transforming an ordinary meal into an unforgettable culinary experience. This fish, rich in flavor and with a firm texture, is ideal for baking, where it pairs perfectly with the flavors of fresh vegetables and spices.

Total preparation time: 1 hour and 30 minutes
Preparation time: 15 minutes
Baking time: 45 minutes
Number of servings: 2

Ingredients:
- 2 wolf fish (approximately 300-400g each)
- 1 medium onion
- 1 bunch of fresh parsley
- 1 ripe and juicy tomato
- 1 lemon
- Salt, to taste
- Freshly ground pepper, to taste
- 4 medium potatoes
- 1-2 tablespoons of butter
- Half a teaspoon of fresh or dried rosemary (optional)

Preparing the ingredients:
1. The fish: Make sure the fish are cleaned and gutted. If you are not familiar with this process, ask someone who knows how to do it or request the seller to do it for you. Fresh fish is always the best option, and a well-chosen wolf fish will have white, firm flesh.
2. The onion: Chop the onion finely, so it softens better during baking and releases its flavors.
3. The parsley: Wash the parsley under cold water and chop it finely. This herb not only adds a fresh taste but also a splash of color to the dish.
4. The tomato and lemon: Slice the tomato thinly and cut the lemon into round slices. These will add acidity and flavor to the fish, helping to balance the taste.

Preparing the fish:
1. Preheat the oven to 180 degrees Celsius.
2. Stuff the fish with the chopped onion, parsley, and a few slices of lemon. This filling will penetrate the flesh, bringing a rich and aromatic taste.
3. Place the stuffed fish on a sheet of aluminum foil, then add slices of tomato and lemon on top, sprinkling salt and pepper to taste. Cover well with foil to retain moisture and flavors inside.

Preparing the potatoes:
1. Peel the potatoes and cut them in half. Both new and older potatoes can be used, but make sure they are firm.
2. In a baking tray, place the halved potatoes, brush them with a little melted butter, then add rosemary, salt, and pepper. This combination will turn the potatoes into a delicious and aromatic side dish for the fish.
3. Put the tray with potatoes in the oven along with the fish. Bake everything for 40-45 minutes, until the fish is cooked and the potatoes are golden and crispy.

Serving:
Once the fish and potatoes are ready, carefully remove them from the oven. The fish should be juicy, with white flesh that easily separates from the bones. Place each fish on a plate, alongside a few halves of golden potatoes. You can decorate with a few fresh parsley leaves for an appealing look.

Personal notes:
This oven-baked wolf fish recipe is one of my favorites, as it combines ease of preparation with exceptional flavor. It is perfect for a special dinner, but also for a family meal on the weekend. If you want to add a touch of originality, try adding some green or black olives to the fish filling.

Useful tips:
- Choosing the fish: Opt for fresh fish with clear eyes and red gills. Frozen fish will not have the same texture and flavor.
- Vegetarian option: This recipe can be adapted by replacing the fish with sliced zucchini or eggplant, stuffed with the same ingredients.
- Frequently asked questions:
- Can I use another type of fish? Yes, any white fish with firm flesh will work well with this recipe.
- What should I serve alongside this dish? A dry white wine, a fresh salad, or a side of steamed vegetables are excellent choices.
- How can I store leftovers? Cooked fish can be stored in the refrigerator for 1-2 days, covered tightly.

Nutritional benefits:
Fish is an excellent source of protein and omega-3 fatty acids, beneficial for heart health. Potatoes, being a good source of carbohydrates and fiber, provide energy and support digestion. This recipe is perfectly balanced and nutritious.

Enjoy every bite of this simple yet extraordinary dish, and turn every meal into a celebration of flavor!
