Dough

1. In a spacious bowl, add the eggs, making sure to keep one egg white aside for later use. Pour in quality cocoa powder, melted margarine, powdered sugar, and vanilla sugar. Using a mixer, blend the ingredients at medium speed until the mixture becomes homogeneous and fluffy. It is important to ensure that the sugar is completely dissolved to avoid unpleasant crystals in the dough.

2. Once a uniform mixture is obtained, gradually add the sifted flour, continuously mixing to avoid lumps. It is recommended to sift the flour before adding it, as this process helps aerate it and contributes to a fluffier texture of the cake. Continue mixing until the dough becomes elastic and easy to handle.

3. Once the dough is ready, ensure you have a well-prepared baking tray. Grease it with a little oil or margarine and sprinkle flour to prevent the cake from sticking. Pour the dough into the tray, leveling it with a spatula to achieve an even surface.

4. Preheat the oven to 180 degrees Celsius. Once the oven has reached the desired temperature, place the tray with the dough inside and bake for about 25-30 minutes. 5. After the cake has baked, let it cool in the tray for 10 minutes, then transfer it to a rack to cool completely. This is an ideal time to prepare the desired cream or glaze.
