Whip 600 ml of heavy cream with the whipped cream stabilizer until firm. Once the vanilla mousse is completely cooled, gently fold the whipped cream into the white chocolate cream with a spatula, mixing from top to bottom to maintain airiness.

5. Assembling the cake:

On the bottom of a cake pan, place a plastic wrap. Pour the vanilla mousse in a layer of about 2 cm. Use a piping bag to draw lines with the dark chocolate filling, then add the pitted cherries between the lines. Continue with another layer of vanilla mousse, repeating the process until all ingredients are used up.

6. Cooling and serving:

Refrigerate the cake for a few hours, ideally overnight, to set well. When ready to serve, decorate with grated chocolate or a chocolate glaze, if desired.
