Ingredients for the dough:
- 250 g flour
- 125 g cold butter, cut into cubes
- 1 egg
- 1 pinch of salt
- Cold water (as needed)

Ingredients for the filling:
- 300 g fresh spinach (or 200 g frozen spinach)
- 3 eggs
- 200 ml cooking cream
- 100 g feta cheese or cottage cheese
- Salt and pepper to taste
- 1 small onion (optional)
- Olive oil (for sautéing the onion)

Step 1: Preparing the dough
In a large bowl, combine the flour with the salt. Add the cold butter and, using your fingertips, work it into the flour until you achieve a texture similar to fine sand. Add the egg and incorporate it. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Form a ball, wrap it in plastic wrap, and refrigerate for 30 minutes. This step is essential for achieving a flaky crust.

Step 2: Preparing the spinach
Wash the spinach well under cold running water, then blanch it in a pot of boiling water for 2-3 minutes. Drain it and cool it quickly under cold water to preserve its vibrant color. If using frozen spinach, ensure it is well thawed and drained.

Step 3: Preparing the filling
If you want to add onion, sauté it in a pan with a little olive oil until it becomes translucent. In a bowl, beat the eggs together with the cream, then add the drained spinach, crumbled feta cheese, salt, and pepper. Mix all the ingredients until you achieve a homogeneous composition.

Step 4: Assembling the quiche
Preheat the oven to 180°C. Remove the dough from the refrigerator and roll it out on a floured surface until you achieve a sheet about 3 mm thick. Place the dough sheet in a 24 cm tart pan, ensuring that the edges are well covered. Prick the dough with a fork to prevent it from puffing up.

Step 5: Baking
Pour the spinach filling over the prepared dough. Bake the quiche in the preheated oven for 30-40 minutes, or until the filling is firm and the surface turns golden.

Step 6: Serving
Let the quiche cool for a few minutes before slicing it. Serve it warm or at room temperature, alongside a fresh seasonal salad. You can also add a few slices of tomatoes or avocado for an extra freshness.

Remove the dough from the fridge and roll it into a round sheet. Place it in a buttered tart pan dusted with flour. The sheet should be large enough to cover the sides of the pan. The amount of dough is perfect for a pan with a diameter of 26 cm. (I used a round cake pan) Prick the dough with a fork in several places. First, add the spinach, then the cream cheese. Beat the egg and add it over the cheese, and finally add the grated cheese. Place the pan in the preheated oven at 180°C for 40-45 minutes. It is ready when it is nicely browned. Serve hot as well as cold. Enjoy your meal!

 Ingredients: Dough: 250g flour, 150g butter, 1 egg, 2 tablespoons cold milk or water, 1 teaspoon salt. Filling: 1 kg fresh or frozen spinach, 250g ricotta, 250g goat cheese, 4 tablespoons sour cream, 5 eggs, 1 tablespoon flour, 1 egg for topping, 2 tablespoons grated cheese or Swiss cheese.
