This simple and delicious sauce, inspired by Spanish culinary traditions, is a flavorful blend of garlic, fresh parsley, and oil, perfect for complementing any meat or fish dish. An important aspect to mention is that the sauce can be kept in the fridge for about 10 days, but if you opt for the dry version, it can last even more than two weeks. In the Valencian Community, this sauce is almost always present at any meal, being a slightly adapted version of the classic Romanian garlic sauce.
Making the sauce is very simple. The entire recipe can be adapted according to personal preferences, whether you want a stronger sauce or a milder one, depending on the amount of garlic and oil you use. Recently, in Romania, there has been a trend to use the stovetop instead of the classic grill, and this method is perfect for preparing meat, which can be cut into thin fillets, ideal for quick cooking. The meat will be less fatty, especially in the case of chicken breast or pork chop. Additionally, this sauce pairs wonderfully with fish and seafood, whether boiled or fried, adding a boost of flavor to any dish.
To prepare the sauce, start with 4-5 cloves of garlic, a generous handful of fresh parsley leaves, and a liter of oil. Use a taller container to avoid splashing, then add the ingredients and blend with a stick mixer at high speed until you achieve a smooth paste. If the texture is too thick, add a little oil to adjust the consistency. Finally, don't forget a pinch of salt and a drop of vinegar to enhance the flavors!
There is also the option to blend the ingredients without oil, which will make the sauce last longer in the fridge, but will require adding oil when serving. A simplified version for home includes 5-6 cloves of garlic and the leaves from a few sprigs of parsley, all quickly prepared in a home blender. The important thing is to add just a drop of vinegar to keep the vibrant green color.
An interesting trick is to use the parsley stems, which you can blend and turn into a paste for decorating platters. Adding paprika or dried peppers can provide a splash of color and an even more intense flavor. As for the oil, preferences vary; Spaniards use extra virgin olive oil, but sunflower or corn oil can also be a good choice.
