In this recipe, I will guide you step by step to prepare a vegan apple roll, a simple and tasty dessert, perfect for concluding a festive meal or simply to indulge yourself on an ordinary day. This recipe is ideal for vegans or for those who want to avoid animal products.

Ingredients:

For the filling:
- 4 medium apples (preferably sweet apples like Golden or Gala)
- 100 g sugar (or to taste)
- 1 teaspoon of cinnamon
- 2 tablespoons of vegetable oil (sunflower or canola)

For the dough:
- 250 g flour
- 100 ml sparkling water or still water
- 50 ml vegetable oil
- 1 packet of baking powder
- A pinch of salt

Preparation:

1. Prepare the ingredients: Start by peeling the apples and grating them on a large grater. This step is essential to achieve a uniform and tasty filling.

2. Caramelizing the apples: In a large pan, add the two tablespoons of oil and, over medium heat, add the grated apples. Sprinkle the sugar over the apples, stirring constantly. Let them heat, stirring occasionally, until the apple juice reduces and the mixture becomes denser. This process will take about 10-15 minutes. Once the mixture has cooled slightly, add the cinnamon and mix well.

3. Preparing the dough: In a large bowl, combine the flour, baking powder, and salt. Make a well in the center and gradually pour in the oil and water. Mix with a wooden spoon or your hands until you obtain a homogeneous dough. Do not knead too much, as this will make the dough dense.

4. Rolling out the dough: On a floured work surface, roll out the dough into a rectangle shape, about 5 mm thick. Use a rolling pin to achieve an even thickness.

5. Filling and rolling: Place the apple filling on the rolled-out dough, leaving free edges on all sides. Spread the filling evenly. Then, carefully start rolling the dough from one end, forming a tight roll. Make sure the filling does not escape from the roll.

6. Baking: Preheat the oven to 180°C. Place the roll in a baking tray lined with parchment paper. Bake for 25-30 minutes or until the roll is golden and slightly crispy on the surface.

7. Cooling and serving: Let the roll cool in the tray for 10 minutes, then transfer it to a wire rack to cool completely. You can sprinkle powdered sugar on top for a more appealing look. Cut the roll into slices and serve it plain or with a scoop of vanilla (vegan) ice cream on the side.

Variation suggestion: If you want to add a special touch, you can incorporate chopped nuts or raisins into the filling, providing a contrast of textures and flavors. You can also replace cinnamon with nutmeg or ginger to add another layer of flavor.

This vegan apple roll is not only easy to make, but it is also an excellent choice for a healthy and tasty dessert. Enjoy every slice and savor the natural flavors of caramelized apples!
