Eggplant and zucchini are two versatile and delicious vegetables that, when combined, can offer an unforgettable culinary experience. We start by slicing the eggplants and zucchinis into rounds about one centimeter thick. These rounds are sprinkled with salt and left to sit in a kitchen strainer for about 30 minutes. This step is essential as it allows the vegetables to release excess water, contributing to a better texture during cooking.

Meanwhile, we prepare the chicken breast. It is cut into appropriately sized pieces, not too large, and each piece is seasoned with salt and freshly ground black pepper. If you want to add an aesthetic element to the plate, you can use a cookie cutter or a glass to achieve uniformly sized meat medallions.

To enhance the flavor, each slice of zucchini and eggplant is grilled on a hot grill, drizzled with a few drops of oil, until they become lightly browned on both sides. We do the same with the chicken breast pieces, ensuring to achieve a nice and appetizing crust.

Now, let’s focus on the sauce. In a saucepan, add the olive oil, and then add the thinly sliced garlic cloves. Sauté them lightly until they become golden, thus drawing the flavors into the oil. Then, add the tomato sauce, a little honey, salt, and spices like pepper and oregano. Personally, I like to make the sauce slightly sweeter, as this combination with the meat and vegetables brings a complex and pleasant taste.

For the side dish, the potatoes can be cut into larger cubes, which are placed in a baking tray. They are drizzled with olive oil, sprinkled with cumin, and baked in the oven. It is important to mix them carefully to avoid breaking them, and to bake them until they become golden and crispy.

Once all the ingredients are prepared, we start assembling the skewers. We take the skewers and alternately place a piece of meat, a slice of eggplant, a slice of zucchini, and for an extra touch of color and freshness, half a tomato or a cherry tomato on each one. After finishing assembling the skewers, we trim them with kitchen scissors to make them easier to handle.
