Plum Cake

 Ingredients: -17 plums, large -18 tablespoons sugar -18 tablespoons oil -18 tablespoons milk -1 baking powder -1 egg -salt -grated rind of one lemon -flour as needed

In a generous bowl, start by adding the tablespoons of sugar, oil, milk, baking powder, egg, salt, and grated lemon zest. Mix these ingredients with a spatula or a whisk until you achieve a homogeneous mixture. It is important that the sugar is completely dissolved, and the other ingredients are harmoniously integrated. Once the composition is well combined, gradually add the flour until the dough reaches a pleasant consistency and no longer sticks to your hands. It is recommended to add the flour gradually to control the texture of the dough.

After you have obtained a uniform dough, divide it into two equal parts. Take one half of the mixture and roll it out on a piece of parchment paper, previously cut to the size of the tray you will use. Make sure the dough is evenly rolled out to a thickness of about 1 cm. Once you are done, carefully transfer the paper with the dough to the prepared tray, being careful not to tear it.

Now, it is time to prepare the plums. Wash them well and cut them in half, carefully removing the pits. Arrange the cut plums on top of the dough in the tray. You can layer them so that you evenly cover the entire surface of the dough, ensuring a delicious taste and intense aroma.

After placing the plums, take the other half of the dough and roll it out on a floured surface. Make sure the sheet is large enough to cover the plums in the tray. Once rolled out, carefully place this sheet of dough over the plums, trying not to leave gaps.

Now, it is time to place the tray in the preheated oven. Bake the cake until the surface turns nicely browned, an indication that it is ready. The baking time may vary, so check the cake after about 30-40 minutes. Once you have achieved a pleasant brown color, remove the tray from the oven and let the cake cool in the tray to firm up a bit.

After it has completely cooled, cut the cake into portions and enjoy it with a cup of tea or coffee. This plum cake is perfect not only for dessert but also as a snack between meals. Enjoy your meal!
