- 9 lasagna sheets (preferably whole grain)
- 400 g mushrooms (champignon or any preferred mushrooms)
- 1 large onion
- 1 medium zucchini
- 1 bell pepper (red or yellow)
- 2 cloves of garlic
- 200 g fresh or frozen spinach
- 400 g canned tomatoes (or 4 fresh tomatoes)
- 250 g ricotta cheese
- 200 g grated mozzarella
- 100 g grated parmesan
- 4 tablespoons olive oil
- Salt and pepper to taste
- Herbs (basil, oregano) to preference

Step 1: Preparing the vegetables
Start by cleaning and finely chopping the mushrooms. Finely chop the onion and garlic. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until translucent, then add the garlic and mushrooms. Cook until the mushrooms release their juice and become slightly golden. This process will enhance the dish's aroma.

Step 2: Adding the vegetables
Dice the zucchini and bell pepper into small cubes. Add them to the skillet along with the spinach (if using frozen spinach, ensure it is thawed and well-drained).
