Yogurt Cake
To create a delicious and refreshing dessert, we will use a simple recipe for yogurt and peach cake that is sure to impress anyone who tastes it. We start by preparing the necessary ingredients. We will need two boxes of yogurt, sugar, vanilla sugar, gelatin, canned peaches, biscuits, and of course, instant coffee, which will add a distinct flavor note.
In two separate bowls, we will add 2 boxes of yogurt each. It is important that the yogurt is at room temperature for easier mixing. Then, in each bowl, we will add 12 tablespoons of sugar and 2 packets of vanilla sugar. Using a spatula or mixer, we will mix the composition well until the sugar is completely dissolved and we obtain a smooth cream.
Next, we will take care of the peaches. We chop the canned peaches into small cubes and add them to one of the bowls with yogurt. In the other bowl, we will add the 3 packets of instant coffee. This step will add an intense flavor and a pleasant contrast to the sweetness of the peaches.
After preparing the compositions, we turn our attention to the gelatin. We will take the three packets of gelatin and soak them in 150 ml of cold water. Then, we put the bowl on the stove, being careful not to let the gelatin boil. It is important to heat it only until it becomes warm and completely dissolves. Once melted, we divide the gelatin equally into the two bowls with yogurt and mix well to ensure it is evenly distributed.
Now it’s time to prepare the biscuits. We take the leftover juice from the canned peaches and soak the biscuits, quickly dipping them in the liquid so they absorb the flavors but do not become too soft. We place the biscuits in a loaf pan, which we have previously prepared with plastic wrap, leaving longer edges to cover the cake later.
After laying down a first layer of biscuits, we pour half of the yogurt and peach mixture, ensuring it spreads evenly. Then, we add another layer of soaked biscuits, followed by half of the yogurt and coffee mixture. We continue to alternate layers of biscuits and mixture until we finish all the ingredients. The last layer will always be the mixture.
After we finish building the cake, we cover the pan with plastic wrap and let it chill in the refrigerator for at least 2-3 hours. For an even better result, it is recommended to let it cool overnight to allow the flavors to meld.
When it comes time to serve, we can lift the cake using the edges of the wrap and cut it into slices. This yogurt, peach, and coffee cake is a perfect dessert for hot summer days or any special occasion. Enjoy!
