To prepare a delicious meat and pea dish, we start by cutting the meat into smaller pieces, ensuring they are uniform for even cooking. This will allow each piece to absorb the flavors well. Then, we take care of the vegetables: the onion and bell pepper are finely chopped, so they integrate harmoniously into the dish and provide a rich taste. The tomatoes, essential for the sauce, are carefully peeled and then sliced thinly, so they break down quickly during boiling.

In a pot, we heat 50 ml of oil, which will add a special flavor to our dish. When the oil is hot, we add the finely chopped onion and bell pepper, sautéing them over medium heat until the onion becomes translucent and the bell pepper releases its aroma. Now it's time to add the portioned meat, seasoning with salt and pepper to taste. To intensify the flavors, we add gulyas paste or, in its absence, a teaspoon of paprika, which will give the dish a hint of color and a smoky taste. After the meat has started to brown slightly, we add the sliced tomatoes. They will bring an extra acidity and moisture, contributing to the formation of a delicious sauce.

We let the mixture come to a boil, then add enough water to cover the meat well. It is important to let everything simmer over medium heat, covered, to allow the meat to tenderize well. If we notice that the water is reducing but the meat is not yet cooked, we can add a little warm water. In the end, we should have a broth that covers the meat by about two fingers.

Once the meat is nearly done, we add the frozen or fresh peas and continue to boil until they soften. While the peas are boiling, we prepare the roux that will thicken the sauce. We mix two tablespoons of flour with 300 ml of sour cream, obtaining a homogeneous composition. We thin this roux slightly with a little water before pouring it into the sauce, stirring constantly to avoid lumps.

We let everything come to a boil until the sauce thickens and the flavors combine. It is essential to serve the dish hot, so each ingredient retains its authentic taste. A garnish of freshly chopped parsley can add an extra freshness to the dish. Enjoy your meal!
