Carrot cake
We start by preparing all the necessary ingredients for this delicious recipe. Make sure you have 200 grams of sugar, 100 ml of oil, 3 eggs, 200 ml of yogurt, 300 grams of flour, 1 packet of baking powder, 1 teaspoon of baking soda, and a vanilla essence for added flavor. It is important to use ingredients at room temperature to achieve a homogeneous and well-aerated mixture.
In a large bowl, start by beating the sugar with the oil using a mixer until you obtain a creamy and fluffy mixture. This step is essential because the sugar will dissolve better and contribute to a fine texture of the cake. Then add the eggs one by one, making sure to incorporate them well into the mixture. After each egg, mix until homogeneous. Next, add the yogurt and vanilla essence, continuing to beat the mixture until all the ingredients are well combined.
In another bowl, sift the flour together with the baking powder and baking soda. This step will not only eliminate any lumps but will also help aerate the flour, making the cake fluffier. Add the flour mixture over the wet mixture, gently mixing with a spatula or wooden spoon. It is important not to overmix, as this could lead to a dense texture. Mix only until the flour is incorporated and no lumps are visible.
Once you have a homogeneous mixture, you can pour the batter into a baking tray lined with parchment paper or greased with oil and sprinkled with flour. Preheat the oven to 180 degrees Celsius and let the cake bake for about 30-40 minutes, or until golden and passes the toothpick test. Once baked, let it cool in the tray for a few minutes, then remove it to a rack to cool completely.
