The rice is carefully cleaned, removing impurities and any damaged grains. Then, it is washed under a stream of cold water to remove excess starch, which will help achieve a less sticky texture. This is an essential step to ensure a delicious final dish. After the rice has been well washed, it is good to let it drain in a sieve to eliminate the surplus water.

Meanwhile, we take care of the vegetables. The zucchini, fresh and juicy, are peeled, taking care to keep the nutrient-rich interior. Once peeled, the zucchinis are grated using a large grater, resulting in fine strips that will easily incorporate into our dish. They will add not only a pleasant taste but also a soft texture that will perfectly complement the rice.

Onion, an essential ingredient in any dish, is finely chopped. This will bring an extra flavor, elevating the dish to another level. It is recommended to use fresh onion, as its aroma is much more intense and pleasant. The bell pepper, on the other hand, is finely chopped, adding a splash of color and sweetness. The pepper can be chosen according to preferences, whether opting for a vibrant red pepper or a more delicate yellow one.

Once all the ingredients are prepared, it is time to start cooking. In a large pan, add a little olive oil and heat it over medium heat. Once the oil is hot, add the finely chopped onion. It is sautéed for a few minutes until it becomes translucent. Next, add the bell pepper, allowing it to sauté gently to release its flavors.

After the vegetables are lightly browned, add the grated zucchini, stirring continuously to prevent sticking. Everything is left to cook on low heat, allowing the zucchini to release its juice, and the flavors to blend harmoniously. At this point, the rice is added to the pan, mixing well with the vegetables, and then water or broth is added, depending on preferences, to be boiled.

Season with salt, pepper, and if desired, you can also add herbs such as dill or parsley to enhance the flavor of the dish. Everything is left to simmer on low heat, covered, until the rice absorbs all the liquid and becomes fluffy. Once done, this dish is served hot, being ideal for a healthy meal full of taste and color.
