Chicken with Pineapple
To prepare this delicious chicken and pineapple recipe, we start by peeling the pineapple. We remove the skin and cut the fruit into small cubes, being careful to remove any fibrous parts as well. Fresh pineapple brings a sweet and sour taste that will perfectly complement the chicken meat. We continue by cutting the chicken into thin strips. This way, the meat will marinate evenly and absorb the flavors from the sauce. The onion and bell pepper are diced, and these will add texture and color to the dish.
For marinating the chicken, we use soy sauce mixed with seasoning, letting the meat sit for about an hour. This step is essential to intensify the chicken's flavor. In a preheated non-stick pan, we add the pineapple cubes along with three tablespoons of sugar. The latter will caramelize, creating a delicious syrup, which we will collect in a separate dish, allowing the pineapple to brown slightly.
Once the pineapple is browned, we set it aside and keep its flavor in the dish. In the same pan, we add two tablespoons of oil and then the marinated meat. We cook the meat quickly, stirring continuously to avoid drying it out. Once the chicken is cooked, we transfer it to a plate covered with aluminum foil to keep it warm.
Next, we add a tablespoon of oil to the pan and sauté the onion until it turns golden. Then, we add the bell pepper and sauté it as well, ensuring that the vegetables maintain their crunchy texture. Once they are ready, we caramelize another three tablespoons of sugar in the pan, adding vinegar and about 300 ml of water. We wait for the sugar to completely dissolve, then let the liquid reduce by half.
We add the soy sauce and, to thicken the sauce, we incorporate cornstarch mixed with pineapple juice. This combination will create a creamy sauce, perfect for incorporating the meat, pineapple, and vegetables. We mix everything carefully, check the seasoning, and let the dish simmer for another two minutes for even heating.
Finally, we serve this savory dish alongside plain rice, which will perfectly complement the intense and rich flavors of the chicken with pineapple. Enjoy your meal!
