Pancakes with 'Little Red Riding Hood'
To prepare a delicious recipe for pancakes with caramelized apples, we will start by mixing the basic ingredients. In a large bowl, we combine 250 grams of flour, 2 eggs, 500 ml of milk, 50 grams of sugar, a pinch of salt, and a teaspoon of ground cinnamon. This mixture will create a fine and aromatic batter, which will give rise to fluffy pancakes. After mixing the ingredients well, we let the composition chill for about 30 minutes. This step is essential as it allows the cinnamon to reveal its full flavor, enriching the taste of the pancakes.
Meanwhile, we can take care of the caramelized apples. In a heavy-bottomed saucepan, we add 150 grams of sugar and place it on low heat to caramelize. It is important to be patient, as too high a flame can burn the sugar, turning it into a bitter sauce. Once the sugar has taken on a pleasant brown color, we add 50 grams of butter, stirring constantly until it melts completely. At this point, we peel 2-3 large apples and cut them into cubes. We add the apples to the caramel saucepan and let them cook for 1-2 minutes, allowing them to absorb the sweet flavors and become slightly soft. After we’re done, we take the saucepan off the heat and let the mixture cool.
Now, we return to the pancakes. In a pan greased with a little butter, we pour a ladle of the pancake batter and let it cook over medium heat until bubbles appear on the surface of the pancake. We flip the pancake to the other side and cook until it turns golden. We repeat the process until we finish all the batter.
To assemble the dessert, we place one pancake on a small plate, add 2-3 tablespoons of caramelized apples on top, then place another pancake, and to finish the dish, we put a scoop of vanilla ice cream on top. We decorate with a decadent chocolate sauce and, if desired, add a drizzle of the leftover caramel sauce from the apples.
