In a spacious pot, I began to blend the delicious flavors of this dish. I added two tablespoons of olive oil, letting it heat up gently. Then, I added the finely chopped onion and garlic, allowing them to sauté over medium heat. The sweet smell of the onion becoming translucent and the aroma of the garlic being released are simply irresistible. After a few minutes, I mixed all the spices in a cup, ensuring I achieved a balanced mix that would give the dish an exceptional taste.

Once the onion became glassy, I added the spice mixture over it and continued to sauté for a minute to intensify the flavors. Then, I introduced the finely chopped tomatoes, 80 ml of water, and the freshly squeezed juice of a lemon. I stirred the ingredients well, bringing them to a boil. When the sauce started to boil, I placed the chicken thighs in it and covered the pot with a lid. I let it simmer for about 40 minutes, stirring occasionally to ensure the thighs were well infused with the aromatic sauce.

Meanwhile, I took care of the eggplant. I diced it without peeling, so as to keep all the nutrients and natural flavor. After seasoning the eggplant cubes with salt and pepper, I generously drizzled them with olive oil. I placed them in a tray and put them in the oven for 15 minutes until they became golden and crispy on the outside while retaining their juiciness inside.

When the thighs were ready, I served the dish alongside a creamy mash made from well-cooked, mashed potatoes mixed with butter and milk. On top of the mash, I sprinkled the roasted eggplant cubes, which added a pleasant texture and a contrast of flavors, as well as roasted nuts, which brought an extra crunch and flavor.
