Ruxy's Cake: An Unforgettable Sweet Experience

Preparation time: 30 minutes
Baking time: 25 minutes
Total time: 55 minutes
Number of servings: 12

This cake is a true feast for the senses, combining the fluffy texture of the sponge with two delicious creams of chocolate and vanilla, all covered with a decadent glaze. Inspired by the talented Edith, this recipe has been adapted and improved by me, Ruxy, and has quickly become a favorite among my friends and family. Every guest who has tasted this cake has left with a wide smile and, of course, the desire to try making it at home.

Ingredients

Sponge:
- 9 eggs
- 9 tablespoons of sugar
- 1 packet of Dr. Oetker's Crem Ole with chocolate flavor (126 gr)

Cream I (vanilla):
- 400 ml liquid cream
- 400 ml cold milk
- 2 packets of vanilla Crem Ole

Cream II (chocolate):
- 400 ml liquid cream
- 400 ml cold milk
- 2 packets of chocolate Crem Ole

Glaze:
- 3 tablespoons chocolate liqueur
- 3 tablespoons water
- 3 tablespoons sugar
- 150 gr chocolate
- 150 gr butter

Step-by-Step Preparation

Step 1: Preparing the Sponge
1. Start by separating the egg whites from the yolks. Use fresh eggs for the best results.
2. In a large bowl, beat the egg whites with a mixer on high speed, gradually adding 2 tablespoons of sugar until you achieve a stiff and glossy foam. This is the perfect base for a fluffy sponge.
3. At low speed, add the yolks one by one, continuing to mix. This step will help incorporate air into the mixture, giving the sponge a light texture.
4. Add the packet of Crem Ole and gently fold with a spatula, being careful not to deflate the foam.
5. Pour the mixture into a baking pan lined with parchment paper and level it evenly.
6. Bake at 180 degrees Celsius for 25 minutes. Check with a toothpick if the sponge is baked - it should come out clean.

Step 2: Preparing the Cream
1. Once the sponge has completely cooled, it's time to prepare the two creams. In a bowl, combine all the ingredients for the vanilla cream: liquid cream, cold milk, and the packets of vanilla Crem Ole.
2. Mix on high speed until the cream becomes airy and fluffy. Repeat the process for the chocolate cream, using the corresponding ingredients.
3. Spread the vanilla cream evenly over the cooled sponge, followed by the chocolate cream. Make sure the layers are well-defined for an attractive appearance.

Step 3: Preparing the Glaze
1. In a small saucepan, add the water and sugar and heat on low, stirring until the sugar is completely dissolved. It is important not to boil the mixture.
2. Once the sugar has dissolved, remove the saucepan from the heat and add the chocolate liqueur, butter, and chopped chocolate. Mix well until the chocolate and butter are completely melted and smooth.
3. Let the glaze cool slightly, then pour it evenly over the cake. This glaze will provide a rich and glossy finish, perfect for impressing.

Step 4: Cooling and Serving
1. Place the cake in the refrigerator for at least 2 hours or until the glaze has set. This step is essential to allow the flavors to meld and stabilize.
2. When you're ready to serve, cut the cake into squares and enjoy the reactions of friends and family. It pairs perfectly with a fragrant coffee or delicate tea.

Tips and Recommendations
- You can experiment with different types of liqueur: amaretto or vanilla liqueur are excellent options.

- Don't forget to use fresh, quality cream for the best results.
- This cake keeps well in the refrigerator, so you can prepare it in advance for a special occasion.
