- 1 small tomato, seeded and diced
- 2 tablespoons of butter
- 2 tablespoons of olive oil
- 50g feta cheese or goat cheese (optional, for a stronger flavor)
- Salt and pepper to taste
- Fresh herbs (parsley, dill, or basil) for garnish
Step by step:
1. Preparing the mushrooms: Start by cleaning the mushrooms with a damp cloth, being careful not to wash them with water as they absorb moisture. Carefully remove the stems from the mushrooms, as we will use them for the filling.
2. Boiling the stems: Place the chopped stems in a pot with water and a little salt. Boil for about 5 minutes, then drain and let cool. This step helps to intensify the flavors.
3. Sautéing the vegetables: In a large skillet, add the butter and olive oil. When the butter is melted, add the chopped onion and bell pepper. Sauté until they become translucent, about 5 minutes. Add the mushroom stems and tomato, continuing to cook for another 5 minutes until the vegetables are soft.
4. Seasoning: Finally, season the mixture with salt, pepper, and if desired, add crumbled cheese for extra creaminess. Mix well to combine all ingredients.
5. Filling the mushrooms: Preheat the oven to 180°C. Fill each mushroom with the vegetable mixture using a teaspoon or your fingers to ensure they are well filled. Place the stuffed mushrooms on a baking tray.
