Fluffy horns with rahat
Ingredients: 200 ml milk, 500 g flour, 100 g sugar, 100 g butter, 2 eggs, 25 g fresh yeast, lemon zest, 2 packets of vanilla sugar, a pinch of salt. For the filling: 400 g Turkish delight. For brushing: 1 egg.
Fluffy and delicious, these horn-shaped pastries with Turkish delight are a perfect choice for breakfast or a sweet snack during the day. Preparing them is a true pleasure, and the final result will pamper you with an enticing aroma and a soft texture. We start by gently warming the milk in a saucepan, being careful not to exceed a temperature of 35 degrees Celsius. Once the milk is warm, we take it off the heat and add the yeast, stirring gently to help it dissolve completely.
In a large bowl, we sift the flour, an essential step to achieve a fluffy dough free of lumps. After the flour is prepared, we add the remaining ingredients: sugar, salt, eggs, and melted butter. We begin to knead, gradually adding the milk with yeast. It is important to knead the dough for 15-20 minutes until it becomes elastic and smooth. Once we achieve the desired consistency, we cover the bowl with a clean towel and let the dough rise in a warm place until it doubles in volume, which can take between 30 and 60 minutes, depending on the room temperature.
After the dough has risen, we divide it into four equal parts. We take each piece and roll it out on a floured work surface, forming a sheet with a diameter of about 15 cm. Using a knife or spatula, we cut the sheet into four triangles. At the wide end of each triangle, we place a few pieces of Turkish delight, which will add a sweet and fragrant note to our pastries. We roll each triangle starting from the wide end, carefully forming the horns so that the filling does not escape during baking.
Once we have formed all the pastries, we place them on a baking tray lined with parchment paper, making sure to leave enough space between them as they will puff up during baking. We brush each pastry with beaten egg to give them a golden and appetizing crust. We let the pastries rise again, this time for 20-25 minutes. This step is essential to achieve a fluffy texture.
Finally, we bake the pastries in a preheated oven at a medium temperature until they become golden brown and beautifully golden. The flavors will blend, and the whole house will be filled with an enticing aroma. After taking them out of the oven, we let the pastries cool slightly, then we can serve them warm, possibly sprinkled with powdered sugar for extra sweetness.
