The dough is the perfect base for a delicious cake, and the combination of almonds and cocoa adds a special touch. Start by preparing the dough: in the mixing bowl, add the diced butter and sugar. Use the high speed of the mixer to cream the mixture well until it becomes creamy and bright white. This step is essential to incorporate air into the dough, which will make the base fluffy. Add the eggs, one at a time, mixing well after each. Once the eggs are fully incorporated, it's time to add the flour. Before adding it, mix the flour with the baking powder to ensure even distribution of the leavening agent. When the dough is homogeneous, divide it into two equal parts.

In the first half, add the peeled and finely chopped almonds, gently mixing with a spatula to avoid losing air from the dough. In the second half, incorporate the two tablespoons of cocoa, mixing again carefully. Now, prepare the baking pan: place aluminum foil or parchment paper, and then pour first the white almond base, followed by the cocoa base. After placing the two bases, drain the cherries from their juice and evenly place them on top to add a delicious contrast of acidity.

Preheat the oven to a medium temperature and place the pan in for about 30-40 minutes. It is important to do the toothpick test: if it comes out clean, the base is ready. After removing it from the oven, let it cool completely.

For the cream, mix the two packets of pudding with the 10 tablespoons of sugar. Then, gradually add the cold milk, stirring continuously to avoid lumps. Place the mixture on the heat, stirring constantly until it thickens. After it boils, let it cool. Meanwhile, cream the butter with the two tablespoons of sugar and add the vanilla essence. Once the pudding has cooled, incorporate it into the butter mixture, achieving a smooth and airy cream that you spread evenly over the cooled base.

For the glaze, melt the cooking chocolate in the microwave, being careful not to burn it. Add 40 grams of melted butter, mixing well to obtain a homogeneous composition. Pour the glaze over the cream, and using a fork, create wave patterns on its surface. It is important to let the cake cool until the next day so that all layers set perfectly. When you are ready, cut the cake into cubes and enjoy it patiently.
