Tuscan Soup – a comforting delight that blends the rustic flavors of Italy with simple yet tasty ingredients. This soup recipe is perfect for cool evenings and is easy to prepare, making it ideal for those looking for a quick dessert or a simple soup recipe. Additionally, it is an excellent choice to impress family or friends.

Preparation time: 15 minutes
Cooking time: 30 minutes
Total time: 45 minutes
Servings: 6

Ingredients:
- 1 tablespoon of butter
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 200 g smoked sausage (preferably a quality variety)
- 1 large potato, diced
- 1 liter of chicken or vegetable broth
- 300 g fresh spinach leaves
- 200 ml cooking cream
- Salt and pepper, to taste
- Chili flakes (optional, for a spicier flavor)
- 50 g grated parmesan cheese, for serving

Preparation procedure:

1. Start by melting the butter in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent. It is essential not to brown it too much; you want to develop the flavors without changing its color.

2. Add the garlic and sauté for another 1-2 minutes, being careful not to let it burn, as burnt garlic can give your soup a bitter taste.

3. Meanwhile, prepare the smoked sausage. You can choose to chop it finely or cut it into larger pieces, depending on your preference. Add the sausage to the pot and cook for 5-7 minutes until lightly browned.

4. Add the diced potatoes and the chicken or vegetable broth. Bring everything to a boil, then reduce the heat and let it simmer for about 15 minutes until the potatoes are tender.

5. Once the potatoes are cooked, add the fresh spinach leaves and the cooking cream. Stir well and let the soup simmer for another 5 minutes. The spinach leaves will wilt quickly, adding a pleasant texture and considerable nutritional value.

6. Taste and season with salt, pepper, and chili flakes if you desire a bit of spice. It’s important to adjust the seasonings to your liking, considering that the sausage may already be salty.

7. Serve the soup hot, sprinkled with grated parmesan on top for added flavor. A slice of toasted bread or a croissant on the side will perfectly complete the meal.

Helpful tips:
- You can experiment with different types of sausages, such as beef or pork sausage, depending on your preferences. Additionally, adding vegetables like carrots or celery can enhance the flavors.
- If you prefer a lighter soup, you can replace the cream with Greek yogurt or omit it entirely for a vegan version.
- An interesting variation could be adding green or red lentils, which will transform the soup into a hearty, protein-rich main dish.

This Tuscan Soup recipe is not only comforting but also full of flavor, making it perfect to enjoy on cold winter days or whenever you need a filling meal. Try it and enjoy authentic flavors!
