The cheesecake is a traditional Romanian dessert, perfect for the Easter table. This simple recipe for cheesecake with sour cream is not only delicious but also easy to make, even for those who do not have much experience in the kitchen. I will guide you step by step, providing useful tips and suggestions to achieve a perfect result.

Necessary ingredients:

- 500 g cottage cheese (preferably well-drained)
- 300 g sour cream (with a fat content of at least 20%)
- 3 large eggs
- 150 g sugar
- 1 packet of vanilla sugar (or 1 teaspoon of vanilla extract)
- 1 teaspoon grated lemon zest
- 1 teaspoon baking powder
- 200 g flour
- a pinch of salt
- 50 g raisins (optional, for a richer taste)
- 50 g butter (for greasing the pan)

Preparation instructions:

1. Start by preheating the oven to 180°C. Make sure you have all the ingredients at room temperature for easier mixing.

2. In a large bowl, add the cottage cheese. If needed, you can use a blender to turn it into a fine paste. This will help the cheesecake have a creamier texture.

3. Add the sour cream and mix well with a whisk or spatula. Ensure the ingredients are well combined.

4. Continue by adding the eggs, sugar, vanilla sugar, grated lemon zest, and a pinch of salt. Mix until the composition becomes homogeneous.

5. In another bowl, sift the flour together with the baking powder. This step is essential to avoid lumps in the dough. Then, gradually add the sifted flour into the cheese mixture, continuing to mix.

6. If desired, you can add the raisins at this point for a sweet taste and interesting texture.

7. Grease a baking pan with butter and pour the mixture into it, smoothing the surface with a spatula.

8. Bake the cheesecake in the preheated oven for about 45 minutes or until it turns golden and a knife inserted in the middle comes out clean.

9. After the cheesecake is baked, let it cool in the pan for 10-15 minutes, then transfer it to a rack to cool completely.

Serving suggestions and variations:

The simple cheesecake with sour cream is delicious both warm and cold. You can serve it with a dollop of sour cream or with a fruit sauce, such as cherry or raspberry sauce, for a pleasant contrast of flavors. If you want to add a touch of originality, you can sprinkle a little powdered sugar or even grated chocolate on top.

For a gluten-free version, you can substitute the flour with gluten-free flour, and for a less sweet cheesecake, adjust the amount of sugar to taste. Experimenting with different flavors and ingredients will give you a unique result every time.

This simple cheesecake recipe with sour cream is a true delight that will impress family and friends at the Easter table. It will surely become a tradition in your kitchen!

I used dough from the Chocolate Pasca. 1. I mixed 3 egg yolks with 5 tablespoons of sugar and a vanilla sugar... I also added 1 tablespoon of lemon juice (since I didn't have zest... you can add lemon zest for more aroma) and vanilla... 2. I added about 100g of raisins (I put them in by eye, I didn't weigh them)... 3. I added 450g of sour cream (fat-free sour cream, 16oz) and mixed it well.... 4. I poured it over the dough that had risen for an hour, in the pan... 5. I put it in the oven at medium heat, 350F.... for about 35-40 minutes.... and took it out of the oven.... 6. To avoid brown edges on the pasca, put a strip of dough around it.. 7. And, even though I had some space in the form where I baked the pasca, as soon as it got warm, it started to overflow... so if you have a deeper form, that would be better. Or, like me, put an empty tray in the oven to catch the overflow! 8. When taken out of the oven, it will still be a bit soft in the center. Don't be alarmed... it will firm up. This is how it looks a few hours after being taken out of the oven... and a slice... Recipe for Pasca with sour cream proposed by California. Discuss more about this recipe on the recipe forum.
