Nanaimo bars are a Canadian delight, perfect for any occasion. They have a layered texture, combining crunchy cookies, a flavored buttercream, and a decadent chocolate layer. It’s a simple yet impressive recipe that is sure to impress friends and family. Let’s get started!
Ingredients:
For the cookie base:
- 100 g digestive biscuits (or graham crackers)
- 50 g ground nuts (pecans or regular nuts)
- 50 g brown sugar
- 100 g melted butter
- 30 g cocoa powder
For the buttercream:
- 150 g soft butter (at room temperature)
- 200 g powdered sugar
- 1 tablespoon vanilla extract
- 2-3 tablespoons milk (depending on consistency)
For the chocolate glaze:
- 150 g dark chocolate (or milk chocolate, depending on preference)
- 30 g butter
Instructions:
1. Prepare the cookie base: In a large bowl, crumble the digestive biscuits, adding the ground nuts, brown sugar, cocoa powder, and melted butter. Mix well until all ingredients are combined. The consistency should be moist but not too sticky. If it’s too dry, you can add a little more melted butter.
2. Shape the base: Grease a pan (20x20 cm) with a little oil or line it with parchment paper for easier removal of the bars. Pour the cookie mixture into the pan and press down firmly with a spatula to flatten. Ensure the mixture is evenly spread to form a compact layer. Place the pan in the refrigerator for 10-15 minutes to set.
3. Prepare the buttercream: In another bowl, beat the soft butter with an electric mixer until creamy. Gradually add the powdered sugar, vanilla extract, and milk. Continue mixing until you achieve a fluffy and airy cream. If the cream is too thick, you can add a little extra milk.
4. Add the cream: Remove the base from the refrigerator and spread the buttercream evenly over the cookie layer. Use a spatula to smooth the surface. Place the pan back in the refrigerator for another 15-20 minutes.
5. Prepare the chocolate glaze: In a small bowl, melt the dark chocolate together with the butter using a double boiler or microwave, stirring constantly to avoid burning. Once melted, let the mixture cool slightly.
6. Finalize the bars: Pour the chocolate glaze over the buttercream and spread it evenly. Ensure the chocolate layer completely covers the cream. Place the pan back in the refrigerator to set completely, about 30 minutes.
7. Serving: Once the bars have set, remove them from the pan and cut them into squares or rectangles. You can decorate them with coconut flakes or chopped nuts for a more festive look.
Practical tips:
- You can experiment with different types of nuts or add dried fruits for a different twist.
- If you want a more intense flavor, replace part of the butter with hazelnut paste in the buttercream.
- These bars can be stored in the refrigerator for a few days, but they are best served fresh.
