Leeks with Olives (Lenten)
Leek is a vegetable with a remarkable nutritional profile, often underestimated in the kitchen, but it definitely deserves to be highlighted. With a milder taste than onion, leek adds a touch of refinement to any dish. Its benefits are numerous: it is hypoglycemic, diuretic, and emollient, making it ideal for a healthy diet. This simple yet delicious recipe will transform leek into an unforgettable dish.
We start by cleaning the leek, removing the outer leaf, which can be tougher. Then, we cut the leek into pieces of about 1 cm, ensuring that all segments are of equal size for even cooking. In a deep pan, we put a generous amount of olive oil, which we let heat up. Once the oil reaches the ideal temperature, we add the chopped leek, cover the pan with a lid, and let the vegetable soften over low heat, stirring occasionally to prevent sticking.
Meanwhile, we start preparing a kettle with 200-300 ml of water, which we put to heat. When the leek becomes nicely browned and emits an inviting aroma, we can add enough water to cover it completely. We cover the pan again and let everything boil for about 10 minutes, until the leek becomes very soft and tasty.
After the leek is well cooked, we add a splash of flavor by adding tomato juice, green or black olives, depending on preferences, white wine, and a caramel sauce, which will bring a sweet-sour note to the dish. We mix all the ingredients well, so the flavors combine perfectly. We let the mixture boil for another 5 minutes, making sure that the sauce reduces to a pleasant consistency, but without reducing it too much, as the resulting sauce is absolutely delicious.
