To prepare a delicious dish of stuffed cabbage with soy and cabbage, the first step is to ensure that the cabbage is clean and not too salty. If the cabbage is too salty, we leave it in cold water for 2-3 hours to eliminate the excess salt. During this time, we take care of the soy slices, which we boil for 15 minutes in a pot of water, adding pepper and vegeta to give them a savory taste. After boiling, we drain the soy in a colander, press it lightly to remove excess water, and then let it cool. Once cooled, we pass the soy through a meat grinder to obtain a fine texture.

Now, let's take care of the vegetables. We dice the onion into small cubes, and grate the carrot on a fine grater. In a pot, we add about 50 ml of oil and heat it well. Once the oil is hot, we add the onion and let it soften for a few minutes, stirring occasionally. After the onion becomes translucent, we add the grated carrot and continue to sauté the mixture for 5 minutes. Now it's time to add the rice, which we previously washed in cold water, and sauté it together with the onion and carrot, stirring constantly.

After the rice has sautéed a little, we add a cup of water, season with vegeta, pepper, thyme, and paprika. We let the mixture boil until the water reduces, then we take the pot off the heat and let it cool. Meanwhile, we prepare the cabbage leaves, which will be the base for the stuffed cabbage.

To the minced soy, we add the rice mixture and mix well. It is important to taste the mixture and, if necessary, add more spices to achieve the desired flavor. Now we are ready to form the stuffed cabbage. We take a cabbage leaf, put a suitable amount of filling, and roll it tightly. We place the stuffed cabbage in a pot where we have put chopped cabbage and a few bay leaves on the bottom.

Besides the stuffed cabbage, we sprinkle a few spices, and on top, we cover with cabbage leaves. We add a cup of white or red wine, depending on personal preferences, and fill with water to cover all the stuffed cabbage. Now, the pot is placed in the preheated oven on low heat, where we let the stuffed cabbage cook for about 4 hours. It is important to check from time to time and, if necessary, add more water.

About 30 minutes before turning off the heat, we add tomato paste or tomato juice, depending on preferences, to intensify the flavor and provide an appetizing appearance. Once the stuffed cabbage is ready, we let it sit for a few minutes before serving, so the flavors harmonize perfectly. Enjoy this delicious recipe with your loved ones!
