Total time: 45 minutes
Preparation time: 20 minutes
Baking time: 7-10 minutes
Number of servings: 4
Ingredients:
For the rolls:
- 1 chicken breast
- 100 g sliced cheese
- 100 g sliced ham
- 1 fresh red pepper (or frozen)
- Spices (salt, pepper, paprika)
- 2 eggs
- 1 tablespoon of flour
- 2 cloves of garlic, crushed
- Oil for frying
For the mashed potatoes:
- 4 large potatoes
- 100 g butter cube
- 120 ml warm milk
- Salt to taste
Preparation method:
1. Preparing the chicken breast: Start by slicing the chicken breast into thin pieces. Place the slices between two plastic sheets and gently pound them with a meat hammer on one side, so they become uniform. This step helps the meat cook evenly.
2. Seasoning: Sprinkle salt, pepper, and paprika on the chicken slices to give them a savory flavor. Make sure to season them well, considering that the flavors will intensify during cooking.
3. Filling the rolls: On each chicken slice, place a slice of cheese, followed by a slice of ham and a few strips of red pepper. If using frozen peppers, ensure they are well thawed and juicy.
4. Rolling and securing: Roll the chicken slices tightly, making sure the filling does not escape. Use toothpicks to secure the rolls and maintain their shape.
5. Preparing for frying: In a bowl, beat the 2 eggs with the crushed garlic. In another bowl, place the flour. Dip each roll in the flour, then in the egg mixture, ensuring it is evenly coated.
6. Frying the rolls: In a pan, heat the oil over medium heat. When the oil is hot, add the rolls and fry them for 6-7 minutes, or until golden and crispy. Use a spatula to remove them from the pan and let them drain on a paper towel.
7. Preparing the mashed potatoes: While the rolls are frying, peel the potatoes, cut them into cubes, and boil them in a pot of salted water. Boil until soft (about 15-20 minutes).
8. Mashing the potatoes: After boiling, drain the potatoes and mash them with a fork. Add the butter and warm milk, mixing well until you get a creamy mash. You can adjust the consistency of the mash by adding more milk if desired.
9. Serving: Serve the chicken rolls hot, alongside the creamy mashed potatoes. A delicious suggestion would be to add a fresh green salad for a crunchy contrast.
Variations: You can experiment with different fillings, such as sautéed mushrooms or spinach, to add a touch of freshness. Additionally, if you enjoy more intense flavors, you can add fresh herbs to the mash mix.
These mini chicken rolls with mashed potatoes are not only easy to prepare but also full of flavor, sure to become a family favorite. Enjoy every bite!
