- 1 tablespoon of lemon juice
- 1 vanilla pod

Step by step to perfect jam:

1. Preparing the quinces: Choose large, healthy, and well-ripened quinces. It is essential that they have a uniform yellow color and are firm to the touch. Wash the fruits well to remove any impurities. Peel them, then cut them into slices and then into thin strips. This technique will help ensure even and quick cooking.

2. Preparing the syrup: In a large pot, add the sugar and the 3 cups of water. Place over low heat and stir constantly until the sugar is completely dissolved. Then, increase the heat and let it boil until the syrup thickens (about 8-10 minutes). A useful trick is to check the syrup's consistency using a spoon: if it forms a thin thread when poured, it is ready.

3. Adding the quinces: Once the syrup is well thickened, remove the pot from the heat and add the sliced quinces. Gently stir to coat them evenly with syrup. Let the quinces sit in the syrup for 10 minutes to absorb the flavors.

4. Boiling the jam: Put the pot back on the heat, this time on high. Boil the mixture for 20-30 minutes, stirring occasionally to prevent sticking. When the jam is almost ready (the quinces should be translucent and the syrup should have a thick consistency), add the lemon juice and the finely chopped vanilla pod. This ingredient will give the jam a special aroma.

5. Bottling: Once the jam has thickened well, remove it from the heat and let it cool slightly. Prepare the sterilized jars: you can sterilize them in the oven or by boiling. Fill the jars with warm jam and seal them tightly. Let them cool completely at room temperature.
