- 200 g apricot or plum jam (for filling)
- Powdered sugar for decoration (optional)
Preparation:
1. Preheat the oven to 180°C (160°C for a fan oven). Prepare a 22 cm diameter cake pan, greased with a little oil and dusted with flour to prevent sticking.
2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix the dry ingredients well to ensure they are evenly distributed.
3. In another bowl, mix the mineral water, vegetable oil, apple cider vinegar, and vanilla essence. This wet mixture will give the cake a soft and fluffy texture.
4. Pour the wet ingredients over the dry ones and gently mix with a spatula or whisk until there are no traces of flour. Be careful not to overmix, as this can make the cake dense.
